My 'library' Collections from the Net


A few days didnt manage to open my library to explore new dish..cause got to send Marsya to school. My Hasif has been asking me 'anything to munch munch?'. I told him no cause no time.Normally for Hasif after the compulsory meal which is rice he prefer to eat something else for 'dessert'?

This are my piles of recipes that I found in the net. That did not include another piles of books that I collected and bought. Honestly I prefer to explore those in the net cause, there were some feedbacks from the user that might give me hints and tips. Where else for the books, some are not complete and some are not sincere in giving the recipes!!! Like my koleh koleh kacang that I posted not long ago, the sugar content was way too much!!
As for me if recipe good I will marked them nice but if its not I will throw away the recipe or black marked it as
'NOT NICE, DONT TRY ANYMORE'.

Telur Rebus Goreng Masala


Tired of eating chicken and fishes.. flip my 'library' and found this egg recipe. Something that is not hot and easy to cook. I guess eggs are our saviour when you are out of your wits of wat to cook. I love eggs, my kids too even when there are no 'lauk' eggs can be fried and it save the day!
Ingredients:-(2 orang)
2 biji telur yang telah direbus
11/2 susu serbuk kari masala boleh juga guna rempah kari ayam kalau takde rempah masala
(i use garam masala)
3 biji bawang besar merah di mayang halus
1 kulit kayu manis(i didnt put)
1 tangkai daun kari
1 sudu kecil serbuk cili
sedikit garam n serbuk perasa

Cara cara:-
Goreng telur rebus dengan sedikit minyak, setelah garing angkat. Di kuali yang sama letak kulit kayu manis dan daun kari. Letak serbuk rempah masala, sedikit air dan serbuk cili, masak sehingga naik minyak. Kemudian letak bawang dan 1/2 cawan air serta garam secukup rasa. Masak sehingga bawang tu layu.
Masukkan telur dan gaul rata. Siap

Princess Bread Maker


My 'princess' breadmaker is down!!!! The mechanism that turn the lever only 1 is turning instead of two...aiyooooh...it was given to me from hubby and kids on 'Mother's day' last year. Still under waranty.. ask a favour from Mr Hubby to send to the agent... at the moment, cant do bread..or anything that needs to be kneaded..

Just got a call from agent that the breadmaker will take around 5-10 days to repair! My hubby told me that he managed to get the lady to put in as urgent request as he told her 'my wife cant live without it'. heheheh...Damaged probably caused by overused.....? sure or not? nolah I think because it is CHEAP!!! ($145)

Boxing Chicken


Yesterday 15 minutes before the school van came, Iqram asked whether he can bring KFC chicken to school.. I told him there's not enough time to buy and if  to deliver,  got to wait at least 45 minutes . So I told him, I'll make this boxing chicken for him, which I saw in myresipi web..ermm not bad sedap..

Bahan-bahan ( 2 orang )
  • 5 ketul kepak ayam
  • lada sulah
  • lada hitam
  • jus limau nipis
  • garam
  • bread crumb
  • telur (dipukul dadar)

Cara-cara

  1. kepak ayam dipatahkan dua di bahagian tghnya. lepas tu ambil bahagian yg byk isi. kikis dan terbalikkan isinya ke atas. biar tinggal tulang jer di bahagian bawah.
  2. lepas tu perap ayam tu dgn lada sulah, lada hitam, garam dan jus limau nipis. perap selama mana anda suka.
  3. setelah diperap, ambil ayam tu, celupkan pada telur dan lepas tu terus celup pada bread crumb.
  4. goreng hingga masak dan keemasan warnanya

Penne-Macaroni Goreng



This few days have been quite hectic for me.. mum is not around as she went over to my brother's place to help out as my sis-in-law has just given birth the 4th baby(all girls)!
So I cooked the simplest dish I can think of...Iqram needs to eat before he goes to school and today, the 'auntie' who comes to my house weekly to iron the clothes,can also eat it...the challenging part was to come out with the dish that is not hot as both this two people cant take hot stuff. Whatever available in the fridge was, bean sprout, chye sim, prawns and fish cakes. Pulled out my drawer there this packet of penne pasta which I bought a few weeks ago. Normally I would make pasta with those spagetti sause and sprinkle with lots of mozarella cheese. So today I made this fried pasta that is easy as the 'maggi advertisement' 'cepat dimasak sedap dimakan!'(fast to cook good to eat)....

Ingredients:-
1 packet penne pasta (boil till soft in boiling water with salt & oil)
1 big onion slice thinly
2-3 garlic slice thinly
1 ripe tomato
3 eggs
1-2 fishcake slice thinly
10 medium prawns
1 cube chicken stock
30 cents taugeh
a few stalks of chye sim
21/2 ladle of grinded chilli (or 20 tbsp depends on hot)
3-4 tbsp of oil
salt and msg to taste

Method:-
In wok heat oil, fry onions, garlic till brown .Add grind chilli and chicken stock and continue frying . Add in fish cakes, prawns and chye sim amd stir. Add in eggs fry till 2-3 miniuts .Add boiled pasta and stir.
After all the pasta has been covered by chilli, add in taugeh and stir . turn off heat and ready to be serve.

Kuih Bakar Pandan


The pandan leaves that I bought that day are turning yellow. To save it from going into the dustbin, I decided to make kuih bakar. Of course I cut those yellowish ends and only took the greener ones. 10 pandan leaves is enough to make 1 cup of pandan juice. As usual Mr Hubby brought this for breakfast... comment from him 'almost perfect..not too oily and not too...I forgot
but the sesame seeds are too much, as they 'bertabur ' on his uniform as he ate them.

Ingredients:-
1 cup of sugar
1 cup of pandan juice(or water + pandan essence)
2 cups of plain flour
21/4 cups of coconut milk(450ml)
2 tbsp butter
3 eggs
1/2 tsp salt
green colour
sesame seeds

Method:-
1. Put all the ingredients in blender and blend.
2. Add 2 tbsp of cooking oil in 10" loyang
3.Preheat oven and put the loyang in oven. When the oil dah panas, put in the mixture and sprinkle sesame seeds on top. Bake@ 175 degress till brown or crispy.( I baked for 90 mins to get that top and sides brownish-burnt taste.

Lontong & Sayur Lodeh


Last Sunday I made this for breakfast. I just cant believe it that I made it... looking at all this while my mum was the one who cooked this during Hari Raya and sometimes she made for breakfast.. So that day, Mr Hubby and kids tasted it.. (mum not around) the first comment was from Mr Hubby ..'mmm....'excellent!'...I was so happy.. then he continued..'excellent effort'....waaaaahhhhhaaawa my kids laughed....!!! Then I told him, not bad for a first timer right? He answered me...'wah die die must say good meh?'....wahahaahaaawa there I went again.. but after the good laugh, he did finished 1 big bowl of lontong!! My Hasif(elder son) ate 2 bowls and Iqram(2nd son) 11/2 bowl!!!!. Then after all that I did asked my kids..whose lontong are better? Nenek or mine? Their answers BOTH!!!!Ha..hahahaha

Ingredients:-
kobis dihiris (cabbage sliced)
kacang panjang dipotong serong (long beans sliced diagonally)
sengkuang dihiris ikut suka (yam bean sliced like a match stick)
tahu kering di rendam dahulu(dried soya bean sticks soften)
2 tahu di potong besar dan di goreng (2 beancurd cut in quarters and fried)
2 daun salam(2 bay leaves)
1 helai daun kunyit disiat2 dan di simpul (1 turmeric leaf sliced and tie a knot)
1 tbsp serbuk ketumbar(1 tbsp coriander powder)
2 litre santan+ air (2 litre coconut milk which has been mixed with water)

Bahan2 kisar:- (Blended Ingredients)
3 biji buah keras (3 candlenut)
2 batang serai (2 lemongrass)
1 cm lengkuas (1cm galangal)
2 inci kunyit (2 inches turmeric root)
5 ulas bawang putih (5 cloves garlic)
1 labu bawang besar (1 big onion)
10 helai cili kering di celur (10 dried chili soaked)
segenggam udang kering dibilas bersih (a handful of dried prawns sotften)

Siapkan periuk(pt wok on heat). Tuangkan sedikit minyak untuk menumis(heat oil for frying). Tumiskan bahan2 kisar(fry blended ingredients). Bila perencah garing dan harum, masukkan serbuk ketumbar dan kesemua sayuran mentah (kecuali tahu yang digoreng) dan tumis sayuran sehingga setengah masak(Fry till fragrant and add in coriander powder and all the vegetables except the fried beancurd). Sesudah itu masukkan santan, tahu yang sudah digoreng dan daun salam/daun kunyit(After that add in the coconut milk, fried beancurd, bay leaves and turmeric leaf). Didihkan sebentar dan sentiasa di kacau agar tidak pecah santan(Let it boil for a while and keep on stiring so as the coconut milk wont be curdly). Bubuh perasa, garam dan sedikit gula(Add in salt, msg and a bit of sugar). Siap dihidang dengan lontong(Ready to be serve together with Lontong).

Pedal Goreng Pindang

Cooked this for lunch today. Try something different from the normal pedal goreng which normally my mum cooked. For me it should have been more pedas, then it will taste better..
I think cause I like pedas..

Ingredients:-
500g pedal ayam
5 ulas bawang merah kecil
2 ulas bawang putih
1 inci halia
11/2 inci kunyit hidup
15 biji cili padi ( if nak pedas more)
2 btg lada hijau besar
air asam jawa
garam dan serbuk perasa


Cara-cara:-
1.Rebus pedal kurang 10 minit..pastu potong kecil atau ikut suka
2.Tumbuk bawang merah,bawang putih, halia, kunyit, cili padi hingga lumat
3.Tumis bahan bahan yang ditumbuk tadi hingga pecah minyak
4. Masukkan pedal ayam tadi
5.Kacau2 pastu masukkan air asam jawa, garam dan serbuk perasa
6.Biarkan dengan api kecil hingga air asam tadi kering dan pecah minyak lagi
7.Bila dah betul2 kering masukkan hirisan lada hijau..biarkan seketika dan terus tutup api
8.Sedia untuk dihidang

Egg Benedict

Made this for breakfast for Mr Hubby to munch munch in the car on the way to work. Imagine, a long drive from north to east of Singapore could be quite bored and hungry by the time he reached his office for breakfast...

Ingredients
3 eggs
3 pieces of bread edges trimmed (obviously mine did not)
black pepper freshly cracked
a little butter & a pinch of salt

Method
1. Butter the muffin cup
2. Butter the bread and sprinkle a pinch of salt and pepper.Placed the bread in the cup.
3.Break an egg on the bread which has been slot into cup, u can sprinkle a little bit of cheese if u want(optional)
4. Bake @180 degrees for 15-20 miniutes or till the whites set and the yolk slightly melted

Pizza Bun Roll

Today, feels like eating pizza... so I looked up in my collection of recipes from the net... this is what I found and decided to make & try something taste like pizza but the method of doing is something similar to making swissroll cake whereas for this recipe, u need to cut to pieces to form a bun.

Ingredients for dough:-
120ml water
250g high protein flour(bread flour)
40g fine sugar
40g butter( I used shortening)
1 egg
10g milk powder
1 tsp instant yeast
1/2 bread improver(didnt put this)
1/2 tsp bread softerner(didnt put this)
1/2 cup shredded cheddar
a pinch of salt

Ingredients for Filling:-
1-2 chicken sausage black pepper sliced thinly(ayamas)
1/2 green pepper diced small
5 black olives sliced (didnt put)
1 tsp pickled capers(didnt put)
1 cup shredded mozarella cheese
1 can button mushroom
1 cup tomato sauce(recipe below)
*3 black olives sliced(didnt put)
*some shredded mozarella cheese
*tomato sauce for garnishing

Ingredients for Tomato sauce:-
1 can plum tomatoes mashed
1 big onion diced
3 garlics chopped
1 tbsp tomato puree
2 bay leaves
1 tsp oregano
1 tsp sugar
a pinch of salt
3 tbsp olive oil

Method for dough:-
For me I use the breadmaker:-
Combine all the ingredients in bread machine and set to dough and let the machine do the work.
For manual:-
Combine all the ingredients in a bowl, except butter,mix and knead to form a dough. Add butter bit by bit and knead to a soft dough. let it rest for 1 hour in a bowl covered with cling plastic wrap to double size.
For Tomato sauce:-
Heat olive oil in a wok. Saute onions and garlics till fragrant. Add in bay leaves and tomato puree. Let it for a while. Add in mashed tomatoes, oregano, salt and sugar. Stir well and cook till mixture thickens a bit. Put a side to let cool.
For pizza roll bun:-
When done, knead another 5 minutes and roll to form a rectangular shaped dough 14"x12". Sread tomato sauce and sprinkle slices of saucages, diced green pepper, sliced button mushrooms and shredded mozarella cheese.Roll the dough like a swissroll. Cut to 10 portions with the same sizes and placed in a suitable mould or cups.(I use paper cup diameter 5 inches). Let it rest again for another 1 hour. Sprinkle some mozarella cheese. mushrooms and a bit of tomato sauce on top of the roll buns. Preheat oven and bake at 180C for10-20 minutes.
Ready.

Tiwul Ayu Chocolate


Yesterday made this for breakfast for this morning. Hubby & father 'tapau' to work. My mum cakap, kueh ni boleh tahan tak manis sangat, jadi dia boleh makan banyak...
Resepi dapat dari MYR. Whatever it is my hubby preferred the pandan flavour....still "tekak conventional"... thought wanted to try something new...cause of the choco flavour..

Bahan-bahan (30 biji)
160g tepung naik sendiri
3 tsp serbuk koko
2 biji telur
120g gula castor
1 tsp ovallete
80 ml susu segar
** 1 pkt grated coconut digaul dgn sedikit garam dan 1tsp tepung jagung. (I steamed 1st)put aside.
secukup acuan tiwul ayu disapu sedikit minyak

Cara-caranya
1.Ayak tepung bersama serbuk koko.
2.Didalam mangkuk mixer, pukul telur dan gula hingga kembang. Masukkan ovallete dan terus pukul sambil dimasukkan susu dan pukul terus hingga putih. Masukkan campuran tepung dan kaupbalik dengan spatula atau senduk hingga rata.
3. Ambil sedikit campuran ** kelapa parut dan bubuh kedalam acuan dan tekan hingga padat. Sudukan 1/2 adunan ke dalam acuan.
4. Kukus selama 10 min didalam kukusan yang telah dipanaskan dahulu.

Baked Mussels


This is my version of baked mussels. The other day we went to Swensen's and ordered baked mussel 6pcs I think around $8+. I just got not enough of it... I bought live mussels at Sheng siong 1kg ($2.50) .Boil the mussels 1st. Put tomato sauce(pregos) top with white sauce & lastly mozarella cheese and baked...
