Lemon Yogurt Muffins

Last entry for today...Bake this for afternoon tea...can be for tomorrow's breakfast too...hehehe..the muffins are quite soft textured and recommended for those who like a bit 'sourish' in taste, do not add lemon paste if using lemon syrup concentrated...I don't have to use the mixer to do this... all using by hands...1 hour it takes to prepare all this...from the measuring of ingredients to mixing and baking...even faster if Marsya didn't disturb me just now...

100g cake flour
1tsp baking powder
2 tsp lemon juice 
1/2 tsp lemon paste(optional)
100g plain yogurt
50g sugar
50g butter
1 egg

Mix butter and sugar together and double boil over a simmering water. Stir with hand whisk till well blended. Cool slightly. Sift cake flour with baking powder. Add yogurt, lemon juice, lemon paste and egg into butter mixture and stir till combined. Add in sifted flour mixture and fold lightly. Spoon batter into prepared muffin cups or paper cups and bake at 180 degrees Celsius for 25 minutes.

tumpang tanya kak, muffin ni slalu boleh tahan bapa lama yerk?? yg akak nyer ni ada yogurt, yg saya buat takder yogurt..

ida, akak tak tahu pulak berapa lama dia bolih tahan sebab buat semalam hb bawa pergi office semua hari ni..dah habis dah..
