65C Creme De Coffee

With the sick boys at home.. I managed to steal some time to do bread making..hehe anyway its the bread machine that do half the work and me just knead to the shapes and making of the fillings..got this recipe from 'Do what I like' blog.. I love to visit this blog once in a while as most of it are bread recipes..of course the original outlook was much much lighter colour and better then mine..
Since my bread colour was dark, I had some difficuties in making sure whether the bread has been cooked or not..hahaha.. cause if its white, you can see when it has turned to golden brown top you know your bread has cooked..but for this one, all the top and bottom looked the same..hehehe..anyway, alhamdullilah I managed to get it right.

Ingredients:-
140g bread flour
40g cake flour
55g TangZhong
15g Skim Milk Powder
30g brown sugar
1/4 tsp salt
1 tsp rum -(didnt put this)
1 full tsp instant yeast
25g lightly beaten egg
50ml milk
10g-12g instant coffee granules (I used nescafe classic)-maybe should decrease the amount to get a lighter colour?
20g butter

Method:-
Mix all ingredients together except butter. When a dough is formed, add in butter and knead till dough is smooth and shiny. Prove dough for 60 minutes. Knead dough to release air out of dough and divide dough into 6 pieces( I made 8). Rest dough for 15 minutes. Wrap in one of the filling and shape dough. Prove for 45-60 minutes. Apply egg wash and top it with some almond nibs. Bake at 175C-180C for 14-15 minutes.
(I used bread machine so I dumped everything in)
Note:- If dough is too sticky, work on floured surfaces.

CoffeeCream Cheese Filling:-
40g-50g sugar
100g cream cheese
1 egg lightly beaten
18g cake flour
100ml warm milk + 2 tbsp instant coffee granules(or to taste)
10g butter

Method:-
Cream cheese and sugar till smooth paste is formed.
Add in lightly beaten egg 1/3 at a time and mix well before adding the next portion.
Stir in the sieved flour. Add in the coffee milk mixture and mix well. Microwave cheese mixture for 2 minutes on HIGH and stir it. After stirring it, send it back to the microwave for 2 minutes on HIGH again. Blend well till you get a smooth paste. Mix in the butter. send it to chill in the refrigerator and roll slightly harden cheese paste into a 45g balls to be used as filling.-(I weigh the amount and divide equally).

Mee Hailam



This recipe has been in my keeping for quite sometimes now..only today then I tried this for the first time....according to Mat, this is an oriental dish but with a Malay taste..maybe because of the cili padi and the bean curd in it...

Actually I have not tried the original Mee hailam, cause I ever made myself my version of Mee hailam, but that was also not the real version as I made that according to what was available in my fridge and to my taste....anyway, sorry guys the mee sudah ILEK!! (finished)...hehe

Ingredients:-
500g yellow noodles
300g medium size prawns
1 piece chicken breast
1 green and red pepper diced(I didn't put)- I added carrots
6 oyster mushrooms sliced(I didn't put)
4 cabbage leaves sliced
2 tomatoes cut to wedges
1 cup bean sprout(optional)- I put this
2 hard bean curd sliced and fried(I didn't put this)
slices of celery, spring onions and birds eye chillies
fried shallots for garnishing
3 garlics crushed
3 tbsp oyster sauce*
2 tbsp black pepper sauce*
1 tbsp abalone sauce*-I didn't put
1/2 tsp sesame oil* (mix* all the sauce ingredients in a bowl)
1 tsp black soy sauce
1 tsp corn flour, mix with a bit of water
salt and sugar to taste

Method:-
Wash prawns and separate the head and tail.Marinate cleaned prawns with 1 tsp salt for 5 minutes, wash again and drained. Sliced chicken breast thinly, washed and drained.
Heat some oil in wok, fry the prawns head and tail till golden yellow. Dish out and minced till fine. Boil 1 liter of water in saucepan and add in prawn paste and let it simmer for 20 minutes. Strained the prawns stock.
In a wok, heat oil and stir fry garlics till fragrant.Add in prawns, chicken and stir for 2 minutes. Add in the sauce mixture and the prawn stock. Let it boil.
Add in vegetables and let it for 5 minutes. Add in more water according to preferences.
Add in corn flour mixture and black soy sauce. Stir well. Add in yellow noodles and bean sprout. Stir well. Add salt and sugar to taste. Serve hot with garnishing of celery, fried shallots, spring onions and birds eye chillies.

Ayam Goreng Ala Thai

My kids had this and they love it very much.. 1 kg chicken fillet just finished in minutes...with the help of big kids of course..just cant stop eating, especially when its hot.. serve with your favourite chili sauce or the Thai chili sauce...

Ingredients:-
1 kg chicken fillets
1 cup plain flour
1 cup cake flour
1 tbsp butter
1 cup water
1 tbsp salt
1 tbsp sugar
2 eggs
1/2 tbsp pepper
1 garlic minced
1 cm ginger minced
oil for frying

Method:-
Making sure the texture not so thick or runny, mix all the ingredients except the chicken. Cut chicken fillets to 3 sections and dip each piece to batter and fry till crispy. Ready can be eaten with rice or for snacking.

Sizzling Garlic Beef

When the first time I made the sizzling yee mee, Mr Hubby requested beef..so when I've got this recipe in Noreen's blog I was quite excited.. anyway I adjusted to my convenienced when comes to the method..

Ingredients:-
500g beef sliced thinly
1 tbsp soy sauce
3 tsp corn flour
1 tsp sesame oil
1 tsp coarse black pepper
oil for frying
1 big onion cut to wedges
4 garlics crushed
cauliflower cut small
broccoli cut small
(I've added some carrots, red pepper and sweet peas)
160 ml chicken/vegetable stock
2 tbsp sweet soy sauce

Method:-
Mix beef, soy sauce, corn flour, sesame oil and black pepper in a bowl. Heat oil and add in marinated beef and fry till golden and dish out. Using the same oil stir fry the onions, garlics till fragrant. Add in the stock and other vegetables and stir till soft. While doing that heat hot plate on stove and add in 1 tbsp of oil. Add in the beef and sweet soy sauce into wok and let it simmer till beef cooked. When ready pour mixture onto hot plate, you will hear the sizzling sound and serve..hehehe

Kupang Rebus Serai


 
Mussels boiled with sliced chillies, onions and garlics, bruised lemon grass and add salt and MSG to taste.. Mr Hubby loves this.. as a side dish..

Keropok Lekor

Made this yesterday for afternoon tea..Mr Hubby was on MC since Monday.. maybe till this Friday...alamak, I think I preferred him to go to work..hehe.. dont let him catch me writing this..bukan apa.. all the food need to be catered for when his around..busy lah basically..

Anyway, when I made this ..my eldest son laughed when he saw the boiled 'lekor'..I also laughed..cant describe it but I think you know what I meant right?..hehe
I used about 6 mackerels cause my family loves this snacks...for those who dont add MSG in their cooking please adjust to taste ya..

Ingredients:-
2 Chubb Mackerel (Ikan Kembung/selayang 30cm length)
100g Sago flour
30g tapioca flour
11/2 tsp salt
a bit of MSG

Method:-
Clean fishes and tear off the skin from the head to the tail. Scrap off and just take the meat.
Cut fishes meat to small pieces and blend till fine. After blended, add in flour bit by bit into fish paste. Mix well till finish. Add in salt and MSG. Take some mixture and roll on board till finish. Put water to boil and and add in the'keropok' rolls. Dish out when the rolls float in water and can be kept very long if put in fridge. The rolled keropok can be fried straight without being boiled. Nice to eat it when its hot.

Chocolate Cheese Brownies

Salam dear friends!!!!....I am BACK!!!!...yahooo..yeh yeh... dah boleh...tengah terkinja kinja kat sini ni...today's images are actually what I wanted to post yesterday....this morning tried to logged in to blogger to see any changes...YES!!! YES!! can upload already...

OK basically these Chocolate cheese brownies I made last Friday...,  imagine 1/2 kg of sugar used?!! ..I was scared at first too, but then I just went to 'bungy jump' when I mix the mixture, (basically just terjah aje ni) when I added the sugar...at the same time worried about the cream cheese(which is quite expensive ..if something goes wrong).., alhamdullilah, we still can accept it...but if those who wanted to reduce the sugar, you can adjust to suits your taste..

The mixture yields quite an amount, but since 7 of us in the house the amount is acceptable.. at least 2 days to finish up...I added pecan in my brownies, since I've got some left overs, which I stored in the fridge..Ijan, I put up the recipe here ok. Thank you for the nice recipe and I will definitely keep this as a favourite!!

Ingredients:-
250g soft(room temperature) butter
500g sugar (or use 430g as edited by Ijan)
4 eggs
300g wheat flour(I used plain flour)
100g dark cocoa(powder)
1tsp baking powder
a dash of salt
100g dark chocolate melted
200g pecan, crushed coursely

Cream Cheese Mixture
100g soft(room temperature) butter
300g naturel cream cheese ( I used Philadelphia Cream Cheese)
150g sugar
2 tbsp wheat flour(I used plain flour)
2 eggs

Method:-
Prepare brownie mixture. Mix butter and sugar in a bowl. Add eggs one at time and whip between. Add wheat flour, dark cocoa, baking powder and salt (sift all this first). Melt the chocolate(double boiling) and let cool. Add in melted chcolate and the pecans in the mixture.
Pour half of the mixture in the tray and start preparing the cheese mixture. Mix butter and naturel cream cheese. Add sugar, wheat flour and eggs and mix well. Pour it on the brownie layer and spread the rest of the brownie mixture on it. Bake at 175C degrees for 50-60 minutes, depending on how thick it is.

Chicken Soup

Kids dish.. I just used soup powder, ginger, onions , garlics and some white pepper...no spices like the cinnamon bark,star anice and cloves(or sewaktu dengan nya)...

Ikan Unga Masak Taucu

Yesterday's dish..adults had this while the kids had the chicken soup..so adults just take some of the soup to give the journey to the throat much easier..

Ingredients:-

5 cut small pieces 'Unga' fish(Chia Cho)- or any kind of fish
5 garlics crushed
1 cm ginger sliced
2 big onions slice to rings
1 red chili sliced
a thumb size tarmarind pulp mix with 1/2 cup of water
2 tbsp salted soya bean- pounded coursely
1 tbsp chili paste
1 tbsp sugar

Method:-
Cleaned and marinate fish with turmeric powder and salt. Fry till cook, dish out and put aside.
With the balance oil, add in chilli paste and stir fry for 3 minutes or till oil goes up the surface. Add in onions,garlics, sliced chillies, ginger and stir well. Add in salted soya bean and stir well. Add in tarmarind juice and let it boil for a while.Add in sugar and stir well. When gravy has thicken, turn off heat. Pour mixture onto fishes. Note:- You can add fishes into the mixture in the wok and stir or pour mixture on fishes plate.

Toasted Bread w/ Slice Cheese

When I am short of ideas of what to make for Iqram when he came back from school, I will definitely, made this for him..bread with toasted cheese.. I buttered the bread, add on the cheddar slice cheese and sprinkle some sugar.. just put it in the oven till the cheese has slightly turned brown and toasted..ready..

Bubur Lemak Udang


Since auntie came today, we had this for lunch. Tried the prawn porridge recipe that I've got from myr.com. I garnished with salted eggs. This is my last entry for this week. Tomorrow and day after as usual (Saturdays and Sunday) cant sit in front of the computer to update...cause everybody at home and their meals got to be catered from breakfast to lunch to dinner to supper!!!...jemput tengok and enjoy your weekend...

Ingredients:-
2 cups of rice
1/2 kg prawns deveined and cleaned
1 cup coconut milk
6-10 shallots*
3 garlics*
1 slice ginger*
2 lemon grass bruised
oil for frying
celery , spring onions and fried shallots for garnishings
salt to taste
a bit of white pepper

Method:-
Cooked rice with enough water to make a porridge.
In a wok, heat oil and stir fry *blended ingredients and lemon grass till fragrant.
Add in prawns and stir well. Add in coconut milk and some water and let it simmer till boil. Pour the prawns mixture into porridge, add salt, white pepper and stir well. Let it boil till cook. Serve porridge with garnishings.

Below are some of suggested dishes that can go along with this porridge.
Sambal Ikan Bilis and Kacang (Anchovies &Peanuts Sambal) or some call it sambal padang.
Fried the anchovies first and put aside. Fried the peanuts and put aside. Stir fry chilli paste, belacan some sugar and salt.Turn off heat. Let the sambal cool slightly then you can add in the anchovies, peanuts and stir well.


Kow Pak stir fry in dried shrimp paste and some minced dried shrimp. Add some minced onions, minced garlics and just throw some bird eyes chillies. Stir fry till fragrant and add in the vegetables. The carrots are just an optional.


Preserved radish  stir fry with sliced onions and sliced chillies.

Wanton

Made this for snacking..got the recipe long ago, cant remember when, but definitely through one of the blogger, which I think no longer available...I think some of you already know this..but just for the sake of my own future references I uploaded this OK...

Ingredients:-
1 packet wanton skin (don't know the proper name)
2 hard taukwa(fried and 'scrap' or 'mash' it with a fork to small pieces)
1 egg
1 red chili chopped finely
1 big onion chopped
prawns diced small
salt to taste
some spring onions and celery to estimate
oil for frying

Method:-
Mix all the ingredients and stir well except the wanton skin.Heat oil and take one of the wanton skin, fill a bit of the filling mixture in the centre and wrap to preference. Deep fry using a slow heat till golden yellow. Ready. Serve hot with your favourite sauce.

Bayam & Jagung Masak Bening

Kids gravy, adults veggies..fried some fishballs for Marsya and Iqram and thats their dish...the corn and the spinach, big kids wallop... Put boil some water, together with sliced chillies, onions and garlics to boil. Add in the corn and let it simmer till cook, add some sugar and salt to taste.

When the corn has cooked add in the spinach and let it boil for a while. Do not over cooked. Ready. Still not full, you can eat the corn while u watch TV..hehehe

Asam Pedas Lada Hitam

This what we had for lunch today...Uuuh!! sedap! and pedas.. smoke came out of my ears!!..hehehe...I sip the gravy, like nobody business...(macam hirup sup gitu) my mum sampai shake her head...added to the fishes are fresh and the gravy I tumis sampai garing barulah terasa...ishk jemput tengok ya..hehe

Ingredients:-
500g stingray cut to preferences
2 tomatoes cut quarterly
1/2 cup tamarind juice
water to estimate
salt to taste
oil for frying
some celery (I just used daun kesum)

20 birds eye chillies*
2 tbsp black pepper*
2cm ginger*
2cm fresh turmeric roots*
2cm belacan (dried shrimp paste)*
2 garlics*
6 shallots*
1 lemon grass*

Method:-
Wash and cleaned fish and soaked in lime juice+tamarind juice+ salt and drained.
Heat oil and stir fry *blended ingredients till fragrant and oil goes up the surface.
Add in tamarind juice and water. Let it boil for a while. Add in the fishes, salt and tomatoes. Let it simmer for a while till the gravy thickens a bit. Add in sliced celery and serve with hot rice.

Telur Mata Lembu & Hirisan Bawang, Cili Padi

Ha as requested by Kak Watie, this was the 'simple' dish yesterday!!!! Mr Hubby got to work late so thats why tak masak...Ha..haha.. although its simple, I still took the shots pulak tuuu..hehe..ni dah kira engine nak dekat slow down kot?..haha..the malas wind start to come..

Fried the eggs (I like a little bit crispy), just slice onions, sliced birds eye chillies, add some black soy sauce and went along with hot rice..2x tambah wah cakap sama lu..hehe. ha lauk ni tak adalah, sampai pecah peluh kak!!...sikit aje berpeluh kat ketiak..hehehhee..ish..geli pulak dengar eh..ok..layan...

Spring Chicken

He ..he.. he.. I am in a happy mood now!!!..since I can upload pictures..ha masuk ajelah...went to the blogger help forum, one of the bloggers gave a solution how to solve the problem..

Kacang Panjang Tumis Udang Kering

Red long beans from Thailand,that I was told from the uncle who I bought from... first time I saw this long beans.. I bought some to try...the taste, I think better then the normal ones.. a bit 'lemak' to me..

Ayam Lemak Padi




This dish was the same one that I served that day during the buffet dinner...to some it is quite hot, but my boys can take this. Iqram's favourite dish..,  his eyes will be rounder when he hears I cooked this dish..

Lemak cili padi dish I think was origin from the Minangs..to some people they have their own style of cooking this dish. Some would fry the chickens first and then put in the blended cili padi... I learnt how to cook this from my  cousin's wife who was from Negeri Sembilan..yummy!!

Ingredients:-(1 family)
1 whole chicken wash cleaned(with lime) and cut to 12 pieces
20-25 cili padi (if want hotter can add) blended
1cm fresh turmeric root (if dont have can use powder)blended
2-3 lemongrass crushed
tarmarind juice or asam gelugur or 2 pcs tamarind slice
1-2 turmeric leaves (tear to big pieces) or some kaffir leaves-(optional)
1 small packet coconut milk
1-2 potatoes cut to halves (optional)
water
salt to taste
msg

Method:-
Put pieces of chicken,blended cili padi, lemongrass,turmeric leaves and turmeric in cooking pot. Put on heat and stir. Let the ingredients stand marinated while on the flame. Add in coconut milk and water. Let it boil for a while then add potatoes. When potatoes are cooked then add in tarmarind juice. Put salt and msg to taste. If the gravy too thick add more water. Let boil a while more before off the heat. Serve hot.

Chocolate Chips Oreo Muffins


Aaah!!..Chocolate Again???!!!..sorry guys, that's how it works in my house...'no chocolate no see got chocolate than its for me'...my kids wont touch or even glance if it is not chocolate!!!...so just close your eyes lah if you don't like to see this or go play far far (direct translation seh)

Ingredients:-
1 egg
120 ml fresh milk
55g butter- melted
170g plain flour
2 tsp baking powder
1/2 tsp salt
80g Castor sugar
70g chocolate chips
70g Oreo cookies- break to small pieces (not too small)-(I cleared the cream)

Method:-
Arrange muffin cup cases in muffin tray. Put aside.
Sift flour, baking powder and salt. Put aside.
Preheat oven at 200C degrees or 190C(according to your oven temp)- me used 175C.
Using a whisker, beat egg, milk, sugar and butter till well.-(for me I put in butter last).Add in flour mixture and chocolates chips into egg mixture and stir well.(-this part I used wooden spoon or spatula to mix). (after adding the flour, I added the melted butter and and stir well, then I put in the chocolate chips and stir again). Lastly add in the broken Oreo biscuits and mix well again.
Scoop batter into muffin cups and bake for 15-20 mins-(me about 25minutes). Let it cool from oven and ready.

Daging Masak Sambal

This was for lunch yesterday...thought of making beef rendang, then I thought..ermm wanted something that didn't use too much of coconut milk, so decided on this...for this beef sambal, I used diced tomatoes instead of tamarind juice..and use lots of sliced onions instead of minced ones, garlics, ginger..boiled the beef with some minced ginger first for browning then fried for a while..then the normal procedures of making sambal...

Baked Beans

By the time I wrote this its already 12.12am and its Tuesday Morning..I wanted to post this yesterday but I was tooooo busy...Iqram was not well , so I've got to mend him and Marsya who is very very active(NAUGHTY the direct word) was messing up those things that she was not suppose to touch...(aiyoh!! it seems I still can't loose weight with all this!!!)

We had baked beans for Sunday breakfast...before we went out to the market or buy groceries...normal activities on Sunday or Saturday mornings.. just upload this picture for browsing references purposes..cause when you are short of ideas, images like this can come in handy...trust me...I've been there..hehehe

Pratha Curry Puff


This was actually requested by Mr Hubby yesterday, for breakfast this morning...for the first time he requested a savoury snack for breakfast..which normally he prefers the sweet stuff ....yalah, everyday breakfast with sweet stuff also can be unhealthy right...so I gladly made this cause that was also my favourites...Had this recipe quite sometimes ago..before I started to blog I visited CMG's blog almost everyday...so what ever recipes that I like, I will print out and compile them in my library..so halal ya Che Mat..

Ingredients:-
5-6 instant prata (any brand)
1 egg yolk

Ingredients for filling:-
2 potatoes peeled and diced
3-4 button mushroom diced(I used the canned ones)
1/2 cup beef/chicken cut small*(I boiled first)
1/2 tsp black pepper powder * (*mixed and leave it for 10 minutes)
1/2 cup milk/coconut milk
2 tsp meat curry powder
1 tsp light soy sauce
1 tsp sugar
1 big onion diced
2 cloves of garlics sliced thinly
1 inch ginger minced
(I added, a little bit of salt and MSG to taste)

Method:-
For Filling:- Heat 2 tbsp of oil, saute ginger and garlics till fragrant, and add in mushrooms and stir well. Add in onions and curry powder. Stir well.
Add in beef and some water, and let it a while till cook then add in potatoes and milk. When boiled, add in sugar and light soy sauce.Cook till the potatoes has soften and the mixture has almost thicken but moist.

For Prata Puff:- Take 1 piece of instant prata, cut to half. Fill in the filling on one end and fold.It will become a triangle shape. Press the open ends with a fork and transfer to a tray which has been greased with some butter. Do it till finish and brush surface with egg yolk and bake at 175C degrees, for 20-25 minutes. Yields about 10-12 puff depends on how much filling you can put in.

I also cant figure out the pattern for the coconut milk that I made ...

Bahan2 (sekelurga) -(Ayu buat 1/2 adunan aje)
  • 300 gm Pulut Hitam
  • 1 keping gula melaka (ikut saiz-ikut suka)
  • 1 tin santan
  • 1/2 cawan gula pasir
  • daun pandan (kalau ada)
  • segenggam sagu (kalau suka)
  • susu segar
  • sedikit garam (hujung sudu kecil)

Cara-cara

  1. Rendam pulut hitam semalaman
  2. Bersihkan pulut dengan menyiram di dalam bekas berlubang
  3. Masukkan dalam periuk, masukkan air lebihkan 2-3 inchi dari pulut. Masak hingga rasa masak.
  4. Masukkan daun pandan yang disimpul.
  5. Masukkan gula melaka dan gula mengikut suka manis masing-masing.
  6. Masak sagu dalam microwave 2 minit, tambahkan ke dalam periuk. (atau mungkin boleh terus masuk dalam periuk?)
  7. Akhir sekali, masuKkan santan 1 tin. Sentiasa kacau sehingga mendidih dan likat.
  8. Siap. Bila makan, sila tambah susu segar sedikit. Kalau terlebih pekat, anda boleh tambah susu segar semasa makan.

Lapis Kacang Hijau


Made this yesterday, got the recipe from Bro Rozzan, actually the recipe that he put up in his blog was for a 28 cm tray(doubled the ingredients here) so I actually halved the ingredients and used a smaller tray. So below was what I adjusted to my discretion. At first thought of making koleh koleh kacang, but something went wrong...let that be a secret (biarlah rahsia)..hehehe I decided to make this cause my green beans flour was 'over stock' and soon to be expired..


Kuih Lapis Kacang Hijau -(Ayu gunakan 1/2 adunan asal)

Ingredients:-

200g green beans flour
50g Hoon Kwee flour
40g tapioca flour
120g palm sugar-(Please adjust to preference)
70g fine sugar-(Pls adjust to preference)
salt
pandan leaves
1250 ml coconut milk(500ml) + 750ml water)
some green colourings
8" tray greased with oil

Method:-
Boil, coconut milk, palm sugar, fine sugar and pandan leaves till incorporated.Strained and let cool.Mix all the flour ingredients in a bowl. Add the cooled syrup, salt and mix with the flour
mixture. Strained the mixture and divide to 2 bowls. One with green colour and the other with the original colour. Steam in tray with the alternate layers of colours till mixture finish. Let the kuih really cooled then cut. Ready

LAPIS KACANG HIJAU

Bahan-Bahan
400 gm tepung kacang hijau
100 gm tepung hoon kwee
80 gm tepung kanji
600 gm gula melaka
200 gm gula halus
1 sudu teh garam
2 helai daun pandan
2500 ml santan dari 4 biji kelapa parut
2 sudu teh pewarna hijau
loyang bulat (28 cm) gris sekelilingnya dgn minyak
Cara:
Santan dimasak dgn gula Melaka, gula halus dan daun pandan sehingga gulanya hancur. Tapis dan sejukkan sedikit. Ketepikan.

kesemua bahan tepung dicampurkan di dalam satu mangkuk dan digaul rata. Tuangkan santan yg ditapis tadi ke dalam tepung ini bersama garam. Gaul lagi sehingga rata. Tapis adunan dan bahagi dua. Satu bahagian diwarnakan hijau dan yg satu lagi dibiarkan warna asalnya.

Kukus di dalam loyang berselang-seli warna sehingga adunannya habis. Setiap lapis dikukus selama 3-5 minit atau sehingga masak.

Biarkan kuihnya benar-benar sejuk , barulah dipotong.

Sotong Masak Ketumbar

This is also one of my favourite dish which got a bit 'related' to sotong masak hitam. Reason cause we use the squid's ink in cooking the dishes. I preferred this than the other sotong masak hitam cause of the coriander taste in it...I can just eat this without any other lauk..bertambah2 lah nasi..dan bertambahlah buncit perut ku ini...

Ingredients:-

4-5 medium size squids (cleaned drained sliced but dont throw the 'ink'. keep about 3-4 of those for this dish.)
1 tsp coriander powder
1/2 tsp fennel powder
1/2 tsp cumin powder
1 big onions sliced
2 garlics sliced
2 tbsp chili paste
a bit of minced ginger
1 lemon grass bruised
1/2 tsp turmeric powder
salt, MSG and sugar to taste

Method:-
Heat oil and add in chili paste. Fry till oil goes up the surface. Add in onions, garlics, ginger and lemon grass and stir well. Add in coriander powder, fennel and cumin and stir . Add in squids and stir till incorporated. Add in salt, MSG and a bit of sugar to taste and stir. Ready.


Bendi Goreng Telur

Vegetable dish for today...lady's fingers stir fry in sliced chillies, onions and garlics a tint of turmeric powder. There's some egg whites left over from making the donuts, so I just mix it in and there it goes.

Donuts


Donuts , my kids favourites....I bought the premix donut flour in one of the baking ingredients shop..I think it was S$3 per packet..it makes 16 donuts using the big mould..If were to buy 10 for S$13. I just had enough of trying donuts recipes that does not work for me...hehehe so just buy the premix sudah!!!..confirm jadi and sedap!!...before kneading in my mixer I have to add 2 egg yolks, 60g butter and 180ml water I just mould it and let it rest..then when it has proofed I fried it and dip with my kids favourite toppings..end of story!!..Mr Hubby comments when he saw this.."eh! eh! macam beli punya!'...heheheh..

Butter Prawns

Ho..ho..ho..this was the 'hot dish' about a few weeks ago where most of my friends blogger has already tried doing...and they did it well!!! And at this moment most already tried the Honey Prawns, while I only just started to make this buttered prawns yesterday night.. not much and not so successful in creating the 'jurai' for the eggs..

I was so excited when I almost got the eggs dripping nicely into the hot oil, when suddenly my right hand accidentally hit the hot wok and I was jumping and loose my concentration with both my hands...straight away the eggs 'jurai' went haywire..waahhhaha....definitely will try this again!!!The taste is there!!! For those who has been susccessful in creating the 'jurai', give me another chance ok....hehehe ..Nor, I copied and translated into English ya..thank you..

Ingredients:-
12 big prawns
2 tbsp butter
3 egg yolks
1-2 sprigs curry leaves
a few birds eye chillies
tumeric powder & salt
oil for frying

Method:-
Marinate prawns with tumeric powder and salt. Fry prawns till almost cook, add in curry leaves and birds eye chillies. Mix well for a while and dish out. Heat up about 1/2 cup of the same oil and add in butter. Let the butter melts and make sure the oil is really hot. Meanwhile lightly beaten the egg yolks and place it in a 'roti jala' mould.
Turn off heat . Using both hands, left hand holding the mould with the eggs and right holding a fork or a chopstick...drip the eggs slowly into the hot oil while your right hand stir in a circular motion.Let the eggs flow continuosly. When ready, dish out, drained and mix with the fried prawns.

Sambal Goreng Kupang

.I like to cook and eat this vegetable dish, in fact this was one of my favourites.. during my late mother in law 100 days prayers last year.... we had this for the guest..and this 'sold out ' first compared to other dishes...I can eat it on its own without rice..

Ingredients:-

1 cup boiled mussels
1 big onions sliced thinly
4 garlics crushed
2 red chillies sliced (I put red cili padi)
2 green chillies sliced I put green cili padi)
1/2 inch belacan + 2tbsp water
1 tbsp tamarind juice
2 tbsp oyster sauce
1 hard bean curd diced and fried
2 tempe, diced and fried
2 potatoes diced and fried
7-8 long beans sliced slant
1 bean thread vermicelli (soo hoon) soaked
dried bean curd sheets (tahu kering) soaked (optional)
salt and some sugar or MSG to taste
1/2 cup water

Method:-
1. Heat oil in wok.Add in boiled mussels and fry for a while.Push aside of wok and add in sliced onions, garlics and chillies and stir fry till soft and mix well with the mussels.
2. Add in oyster sauce, belacan and tamarind juice. Stir well, add in tempe, hard bean curd, potatoes and long beans. Add in water and stir well again.
3.Add in salt and some sugar, add in thread vermicelli and stir till soft. Off heat and serve with hot rice.
