Congo Bars

This was another delayed entry, which was supposed to be yesterday's post, but since I was like a mad woman, shouting and bitting my own teeth cause of the 2 kids are facing their final exams this coming few days..I have to postponed it till today lah...a few already tried this...as usual good feedback..straight away zass to my kitchen and brought out the butter...while watching 'Cinta Fitri', I godeh2 the brown sugar and butter with the help of Marsya & Iqram..(ajar pun ajar sinetron tengok juga,..hehe)..

Anyways, back to this, recipe from Rima , who got it from her contacts..which indicated the taste of this is like between brownies & chocolate chips cookies (maybe the chewy type)..well I agree with that...Izah, Ika & Kak Anymz already tried.. you can visit them ya..basically you cant just stop munching at 1, you will go for next and next ..So Rima & contacts thanks again, for sharing this lovely recipe..

Ps:-I used 10x10 tray to get a taller brownies..well actually I was lazy to bring out the bigger tray which stuck ontop of my shelvings...hehe

Ingredients,
2 3/4 cup all purpose flour-(315g)
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter, softened-(150g)
1 lb. light brown sugar(453g) - (Ayu used 300g)
3 eggs-(Ayu used 4 small eggs)
1 teaspoon vanilla
11.5 ounce package milk chocolate chips(326g) - (Ayu  used 300g valrhona dark chocolate chopped)
1 cup chopped pecans (optional)-(Ayu didnt  add)

By mixer:
Sift flour, baking powder and salt in a large bowl. Set aside.
Combine butter and sugar using a mixer until blended.
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
Add vanilla and mix.
Add flour and mix until combined.
Stir in chips and then pecans.

By hand:-(Ayu just use this method)
Sift flour, baking powder and salt into a large bowl. Set aside.
Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.
Add eggs one at a time to butter mixture and stir well after each egg.
Add vanilla, chocolate chips and nuts. Mix well.
Add dry flour mixture and stir until well combined.
Coat a 13 X 9 -(Ayu used 10x10)pan with non-stick spray and spread batter evenly into dish(Ayu used parchment paper).
Bake at 170 degree for 30 minutes or until top is golden brown. Make sure you don’t over bake.

Starprincess - thank you sudi singgah..tak adalah pandai mana dear starprincess, kadang2 pun kita buat tak jadi juga..baru semalam buat baulu kukus tak jadi 8 biji telur rugi..mr tong yang makan ..huhu sayang..tapi apa nak buat dah salah ..buat brownies yang ini kita rasa, kalau ikut stepsnya insya allah ..menjadi..tak apalah actually tiap kegagalan tu ia mengajar kita sebenarnya apa2 yang harus & tak seharusnya dibuat..so lain kali tahu nak handle perkara tu macam mana..:)
