Barbecued Beef, Chicken Wings, Prawns, & Crabs

Assalammualaikum warahmahtullahhiwabarakatu....Rasa2nya dah kenyang makan talam beras yang kita buat 3 loyang tu untuk semua ya..hehe..bak kata Mr Hubby 10 tahun tak nak lagi dah..hahaha....tak adalah mungkin lama sikit baru boleh buat lagi..haha..

Sorry juga tak update blog for the past few days, sebab holidays yang lalu my family semua masuk Johore and overnight kat sana ..biasalah cuti2 nikan, lagi2 quite panjang continue over the weekends and budak2 pun tak ada tuition, so apalagi kembanglah sayap sekejap..hehe..Kita pun tak kemana actually cuma lepak2 kat rumah my brother and we had a family BBQ, just within us aje..my parents dah masuk dulu, my family pulak, Thursdaynya baru berangkat..nasib baik tak jammed..as mostly orang2 yang berbangsa Cina, dah masuk earlier the day before untuk dinner with each family...cuma bila kita balik on Saturday night, jammednya panjang dari kawasan bandar Johore hingga ke Causeway....called the traffic hotline and to our surprise Tuas checkpoint was free flowing..apa lagi kita pun buat U-turn and headed to 2nd link ler..

Anyways, since we already planned nak buat Bbq , I've decided to browse through my collection, and cari recipe untuk bbq tulah..maklumlah jarang buat bbq so tak berapa sure ingredients yang digunakan, kalau dulu2 kita bantai taruk kicap aje..hehehe....terjumpa this in one of my magic cooking book..heheh..so dengan buku2nya sekali  masuk ikut tuannya..and as usual juga, kita( Mr Hubby and me) tuju ke pasar borong SMART to buy the stuff for panggang memanggang..sayang hari tu sotong & anak ikan pari tak ada stok pulak..so just apa yang ada ajelah..dapat ikan pari tapi bapak parilah..

Overall, I beli 1 kg, daging batang pinang untuk dipanggang, 1kg lagi untuk buat satay.(tapi tak buat kuahnya, sebab malas..hehe)
2 kg udang, 1 kg ketam bunga, 1 kg kepak ayam,
sausages & fish/sotong balls..cakap dengan Mr Hubby, ini betul2 nak melan***..ke apa.hehe...
alah anyway, itupun tak habis bbq, kita simpan the rest and buat lauk the next day..

BARBECUED BEEF
Ingredients:-
500g topside- cut into large thin slices, beat to tenderise

Grind coarsely:-
2 red chillies-(If want hot add more)
4 shallots-(bawang merah)
2 garlics-(bawang putih)
1 tsp shredded ginger-(halia)
1 tsp shredded galangal-(lengkuas)
1 stalk lemongrass-(serai)- slice fine

Grind coarsely and add to ground ingredients:-
1 tsp coriander-(ketumbar)
1 tsp cumin-(jintan putih)

1 heaped tsp sugar
1 tsp turmericc powder
salt to taste


Method:-
Combine ground ingredients with beef. Add sugar, salt and turmeric powder.Rub into beef. Marinate overnight or a minimum of 8 hours. Brush with oil and grill or barbecue.


BARBECUED CHICKEN WINGS
Ingredients:-
8-10 chicken wings- wash and slash
11/2 tbsp dark soya sauce-(kicap masin)
1 tsp sugar
salt to taste


Grind coarsely:-
2 cloves garlic
4 red chillies
 4 shallots
2 heaped tsp shredded ginger


Grind coarsely and add to above ground ingredients:-
1 tsp coriander-(ketumbar)-(Ayu used powdered)
1 tsp cumin-(jintan putih)-(Ayu used powdered)

Method:-
Combine chicken wings with ground ingredients, soya sauce, sugar and salt. Marinate overnight or a minimum of 6-8 hours. Brush with oil and barbecue or grill.










BARBECUED PRAWNS, SQUIDS & CRABS
Ingredients:-
Spicy seasoning:

Grind fine:-
8 red chillies-(If want hot add more)
4 shallots-(bawang merah)
2 large garlic-(bawang putih)
1.5cm length fresh tumeric roots(kunyit hidup)
6 candlenuts-(buah keras)-soak to soften


Add to ground ingredients:-
1 tsp coriander-(ketumbar)
1 tsp cumin-(jintan putih)
salt to taste

500g medium size squids(sotong)
- clean well, removeing eyes and ink sac. Peel off skin, slash body, stuff temtacles in body and marinate with 1/3 of spicy seasoning pushing some into the body.


300g MEDIUM SIZE PRAWNS
- clean, removing whiskers. Keep
 head and hell. Marinate with 1/3 spicy seasoning.











3 FLOWER CRABS- remove shell cavity, discard sotmach contents and spongy gils fm claw sockets. Wash well. Crack pincers, rub with the rest of spicy seasoning.

Method:-
salt to taste Leave the above to marinate for at least 5-6 hours. Brush with oil-sugar mixture(proportion 3-1) and babecue or grill. Serve with SAMBALAN.-(Ayu tak buat buat ni, just cicah dengan cili sos aje)


SAMBALAN
Ingredients:--(Ayu didnt make this, just  used chilli sauce)
2 tbsp brown sugar
1 tbsp prawn paste-(petis)
1 tbsp sugar
1 cup water
1 tsp salt
lemon or lime juice(optional)

Method:-
Put all ingredients in a saucepan(except lemon juice), stir and boil for ten minutes. Remove from heat, add lemon juice, stir and cool.
Note:- Squids, prawns and crabs can be marinated overnight.
Prawn paste:- obtainable in jars or pots from most supermarkets or grocery stores.

Maaf juga, as some of the ayam & daging dibakar hitam ler.., sebab yang bakar orang lelaki.. dan bakarnya pun dalam gelap...so macam tulah rupa our bbqed stuff..hehe asal boleh makan sudahlah...

memang bila cuti panjang selalu buat bbq dgn family.sesekali berkumpul seronok kan ayu..kalau laman luas,anak2 berlari2 main kejar2..fuuhh..bila lah adik beradik akak nak berkumpul lg.

fening fening..hehehe mana satu nak amek ni dah laa tuan rumah leka jer tuuu dok tayang tanpa tudung saji.. apa lagi jom kita tarik ramai2 ..rasa serba satu..tak gitu ayu? patut la sunyi sepi ..tuan rumah mai malaysia.. dulu kak ilah dok di kem majidee 10 bulan sellu turun ke tambak..tengok ragam org .. mmg feninggg.. jgn la harap nak g shoping hari minggu tak de parking... ramai rakyat ayu di sempadan tuu..kaya malaysia kan...
