Sotong Goreng Sawi Asin

Lauk sotong yang baru kita cuba ni adalah lauk yang tidak diduga atau the 'unexpected dish'..Entah macam mana kita came across this recipe diinternet..terus terpaut dan terus mencuba.Kebetulan kita nak cari recipe baru untuk sotong dan Yes!..lauk yang cukup simple dan menyelerakan bagi kami..Menurut catatan, recipe ini adalah lauk waktu zaman perang Jepun 
1942 -1945 dulu diSingapura....maklum ler, waktu perang dulu sumber makanan kan terhad jadi orang2 pada waktu tu..'improvise' bahan2 makanan yang ada dan jadilah menu harian mereka untuk menjalani kehidupan seharian..

Recipe  Sotong Goreng Sawi Asin ni juga adalah salah satu recipe yang dimuatkan dalam Majalah Aroma bulan lepas(January 2014)...

Sotong Goreng Sawi Asin

Bahan:-

1kg sotong dipotong ikut suka

200g sawi asin dihiris sederhana kasar (direndam sekejap dan toskan dulu untuk kurangkan masinnya baru dihiris)

10 biji cili padi dihiris

3 biji bawang merah ditumbuk/kisar halus

3 biji bawang putih ditumbuk/kisar halus

serbuk perasa atau gula



Cara:-

Panaskan minyak. Tumis bawang putih dan bawang merah hingga naik bau.

Masukkan cili padi & sotong yang telah dihiris. Gaul rata hingga sotong bertukar warna dan 3/4 masak. Masukkan sawi asin, gaul rata. Masukkan serbuk perasa atau gula untuk seimbanagkan rasa. Tak perlu tambah garam sebab sawi asin dah masin.

Bila dah masak, bolehlah diangkat dan dihidang segera.

Chocolate Marshmallow Slice

Assalammualaikum warahmahtullahhiwabarakatu...Peace be upon you..to my dear friends, silent readers, guests and food bloggers..still remember me?..Hi..thank god here I am ..sorry I have not been updating my blog for 6 months now!!! That is a very long time isnt it..Well during this period, there are quite a lot of things that happened to me & my family...for those that knew me in facebook & instagram should somehow knew..:)
For those that has left comments and asking about my well being thank you and really really appreciated it so much..You guys are indeed the best!..
Well after such a long break,it took me quite sometimes to key in my words..I stared blank through the monitor screen and trying very hard to start..duh!!! Somehow, I've decided to post this entry on Chocolate Marshmallows slice first over the rest..no particular reasons ...except that this cakes/brownies are to die for!!!..Ok ok maybe not dielah..maybe faint for..hehe..I love this so very much and you guys should try it too..Sedappp!!...Before I leave..here are some pantun for 'opening ceremony' or 'Pembuka tirai' or 'break the ice' for this blog..

Chocolate Marshmallow Slice

Ingredients:-
Brownie Base-
280g butter diced
23g cocoa powder(sieved)
1 tbsp instant coffee powder-(Ayu used Nescafe)
165g castor sugar
3 eggs lightly beaten
150g plain flour(sieved*)
1 tsp baking powder(sieved*)
120g walnuts toasted & chopped





Mousse:-
250g marshmallows cut to small pieces
90g butter softened
90ml fresh milk
375g Belgium chocolate buttons -(Ayu used dark chocolate + milk chocolate)
300ml UHT whipping cream(Ayu used non dairy whipping cream)
30g or more depends on size marshmallow

Topping:-
100ml UHT whipping cream(Ayu used Non dairy whipping cream)
300g dark chocolate (chopped)

some marshmallows for decoration
50g dark chocolate (extra melted by double boiling spoon into piping bag)


Method:-
Brownie:-
Preheat oven at 180C. Line and grease a 10" square baking tin. Melt butter in a saucepan  over low heat. Remove from heat and add in cocoa powder and coffee. Stir in sugar and eggs. Fold in flour and lastly walnuts. Bake in prepared tin for 20-25 minutes. Remove from oven and transfer cake into a 10" square loose base cake tin.


Mousse:- 
1. In a saucepan, place marshmallows, butter and milk and cook on low heat until marshmallows have melted. Turn off heat. Quickly stir in chocolate buttons until melting point.

2. In a mixing bowl, whisk cream until stiff. Fold in chocolate mixture of no(1). Pour half the mixture onto base of brownie and arrange 30g or more marshmallows on mousse and allow to set completely(Ayu placed them in fridge) before spreading on topping(ganache). Divide  cake into 16 pieces. Arrange 3 pieces of marshmallows on top of each slice and drizzle with melted chocolate.

Topping(ganache):-
Heat cream in a double boiler and add in chocolate. Stir until melting point.
Tips:- Heat stainless steel knife on stove, to cut slice cakes to get a smooth cut.
