Hainanese Fried Noodles -12th Day Iftar

Wanted to try something different from my normal mee goreng..saw this in a book..gave it a go and siap untuk iftar yang ke 12 hari tu...very fast to prepare and easy too...biasalah juga selalu I kan ni last minute baru decide nak masak apa..last2 ha ni ...1-2 hour before iftar...confirm tak pedas and the kids boleh makan ni..of course jangan letak cili jeruknyalah..hehe

Ingredients:- Serves 4
500g fresh yellow noodles
2 tbsp oil
4 cloves garlic, roughly chopped
100g(1/2 cup) chicken breast, thinly sliced
100g (1/2 cup) medium size prawns, shelled
100g(1/2 cup) fish cakes, thinly sliced, or fishballs, halved
200g mustard greens(sawi) or pak choy cut in 4cm lengths

Garnishing:
2-3 tbsp fried shallots
3 red chillies or 10 bird's eyes chillies thinly sliced

Gravy:-
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
1/2 tbsp oyster sauce
1 tsp sugar
1/2 tsp salt
1/4 tsp ground pepper
200ml water

Method:-
In a small bowl, stir together all the ingredients for the gravy and set aside.
Place noodles in a colander and rinse quickly under running water. Drain and set aside.
Heat oil in a wok and fry garlic until golden brown. Add sliced chicken, fry over high heat for 2 minutes until firm, before adding the prawns and fish cakes(or fish balls). Stir fry for 3 minutes and add the mustard greens. Tos until wilted, about 2 minutes.
Pour in the gravy mix, allow to boil and add the noodles. Cook over medium heat for 3 -5 minutes. Turn off heat and transfer noodles onto serving plates. Scatter fried shallots(if using), over the noodles and serve immediately. Serve sliced chillies separately.
