One day, when we were dining out in an Italian restaurant, I've decided to try the so called aglio olio menu in the list..cause I wanted to try it first and if its nice I would try it at home ..ermm not bad, I said, only thing if it was a bit hot & spicy, the taste would have made me satisfied...although I did finished the entire plate (dont waste food ok).. it was not hot at all no matter how much crushed red pepper or chili flakes I have added!!!...As you guys know..me & my 'malay tekak(taste)' like it hot...hehehe...
When I saw Mamafami's posting a few months ago, thank you dear sis... I reckoned this is the right recipe as she uses 'basil pesto' for her Aglio Olio..My quest to search for that basil pesto ended when I only managed to find another brand that is halal, but of course the brand she used also halallah, but too bad it was out of stock....:)
Based on her recipe, I adjusted according to my taste...Yes my spicy version...hehehe
After cooking I realised now my spagetti aglio olio looks like fried spaghetti ...hahahaha...lantak ler..As long it just suits me & family..I am good...hehe..at the end of the day 1 packet spaghetti ..tak cukup awak..
Spicy Spaghetti Aglio Olio

Adjusted,Tried & Tested:- Ayu@curlybabesatisfaction
Ingredients :
1/2 packet Angel Hair-(Ayu used 1 packet of spaghetti)
4 cloves garlic - chopped-(Ayu used 4 tbsp minced garlics)
1/2 teaspoon chillie flakes (Ayu used 2 tbsp)
1 1/2 tablespoons Waitrose Green Basil Pesto - (Ayu used 3 tbsp Ina Paarman's Kitchen Basil Pesto)
10 medium prawns - peeled and deveined-(Ayu added a pinch of salt & a pinch of black pepper)
3 calamari - Clean and cut the bodies into thick ring
1 teaspoon capers-(Ayu used 1 green pepper chopped)
1 tbsp chilli powder-Ayu added-(can omit this next time, if preferred the clean aglio olio)
5 birds eye chillies slice thinly-(optional)-Ayu added
black olives
salt - if necessary-(Ayu added a bit)
a bit of water-(Ayu did not add this)
olive oil -(Ayu used normal oil as it was out of stock in my kitchen)
Method :
1. Boil angel hair pasta till al dente. Drained and keep aside.
2. In a heavy skillet, heat enough olive oil over medium high heat. Add
in the chopped garlic and fry till fragrant. Add in chillie flakes, chili powder.
3. Add in the basil paste. *Be careful as oil will splutter!!*
4. Add in calamari rings, olives and caper. Stir for a while before adding the shrimps and a bit of water.
5. Last but not least toss the angel hair into the pan and season with salt.

Kenkadang mama masak, ma masuk cili padi tumbuk. Betullah cakap Ayu, orang Melayu, mana kick makan tak pedas kan? Rasa cam baby pulak makan tak pedas! Hahaha...
Nowadays pun dah tak masak guna paste tu lagi, sebab dah tak jumpa kat supermarket biasa. Habis stock. So, masaklah pesen diorang, from scratch. Lagi senang sebenarnya. Ahaks...

ReplyDeletekelihatan enak sekali spaghetti aglio olio yang kak Ayu buat, mana pedas lagi kan..kesukaan saya juga yang pedas begini..alamak jadi ingin buat juga...tapi saya belum pernah lihat ada yang jual basil pesto di Batam kak...
hmmmm pasti rasanya beda kan kalau tidak pakai basil pesto...lain kali kalau ke swalayan tengok-tengok lebih teliti siapa tahu ada..he he he...
