Assalammualaikumwarahmahtullah hi wabarakatu...hari ni Jumaat dah 5 hari anak2 diSingapura mula kesekolah lepas 1 bulan bercuti..routine pun start baliklah..sibuk, kena cepat2 masak in the morning, by the time habis masak..gitu gini anak2 pun ngam2 balik sekolah, prepare for them makanan, yang mana kena suap dan yang mana makan sendiri..lepas tu let them rest sekejap (take a nap) before tuition starts or buat homework/reading sampailah keMagrib(solat, mengaji)..lepas tu dinner pulak..then start masuk bilik balik to continue dengan homework yang masih banyak to finish up..hinggalah time to sleep...begitulah routine anak2 kita ni..of cos in between ada breaklah like tengok tv sekejap aje..My job is to pastikan dia orang tak 'terovertime' depan tv..hehe..dan to remind them what to do..although ada timetable of what they suppose to do..tapi biasalah mesti nak kena ada suara Tarzan juga baru berjalan ler..so everyday begitulah juga routine kita dengan anak2..kalau kita depan pc lama sangat mulalah dia orang pun idle juga, ada yang bergaduh ada yang take advantage mama tak bersuara..hehe..so that was why lah..tak boleh nak languk lama2 depan pc sekarang ni..Cukuplah kalau sempat kita update blog seminggu sekali itupun type/edit gambar/mengarang pelan2 beberapa entry dan save in the draft until semuanya dah siap, barulah kita post sekali jalan..:)
Anyway, menu nasi kunyit & set ni kita masak pun dah lama juga..2-3 bulan yang lalu..sebab rasa macam dah lama tak masak nasi berperisa itu yang kita nak cuba this set pulak...Nasi Kunyit ni pada kita ada sedikit kelainan aje dari Nasi Kuning yang pernah kita masak dulu..yang ini ada letak chicken powder so ada berperisa sikitlah.. Then kita kenakan pula dengan lauk chicken vindaloo & bayam goreng style mamak kat bawah.. oops, plus goreng poppadum yang terlupa nak masukkan dalam gambar..
To me the chicken vindaloo is nice, dan suka dengan consistency kuahnya, rasanya dan warnanya..lagi dengan ayam yang dimasak meresap segala rasa masam, manis, & masin..
As for the bayam pula...sebab kebetulan time tu bayam kita beli 2 ikat dan nak masuk dalam fridge macam dah tak muat so masaklah cara macam ni pula, style orang India masak..Overall, gandingan yang sedappp pada kami..Kalau sudi nak cuba dipersilakan lah ya..

Ingredients :
1kg Basmati rice, wash and drain
3 Pandanus leaves
2cm Turmeric, pressed for juice-(Ayu used 1 tbsp turmeric powder)
2 tbsp Margarine-(Ayu used butter)
1 Big garlic-(Ayu used 1 tbsp minced garlic)
1 tsp Chopped ginger-(Ayu used 1 tbsp minced ginger)
6 Cloves -(Ayu used 4 nos)
4cm Cinnamon stick
10 Cardamoms-(Ayu used 4 nos)
1 tbsp Chicken powder-(Ayu used 11/2 tbsp)
1 liter Hot water-(Ayu just used normal room temperature water and cook as usual, please adjust according to your type of rice used)
Deep fried cashew nut-(Ayu didnt add this)
Method :

Stir fry margarine, garlic, chopped ginger, cloves,
cinnamon stick and cardamoms until fragrant.

Add rice, turmeric juice and pandanus leaves.
·
Stir fry until oil is absorbed into rice.
(Ayu poured water and let boil for a while, added salt msg & chicken powder..then Ayu poured into rice cooker and let it cook as usual. Ayu did not steam it but cook as the normal way)

Pour half pot of water in 3 liter pot.

Put steamer on top.
·
Put the rice in the steamer.
·
Sprinkle chicken powder and hot water into the rice
evenly.
·
Cover the lid and steam until strong steam appears.
·
Repeat sprinkling until rice is cooked.
·
Sprinkle cashew nut and deep fried shallot slices on top
when serve.

Chicken Vindaloo

Ingredients:-
- 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes -(Ayu used 1 whole chicken cut to pieces)
- 2 tablespoons minced fresh ginger
- 1/4 cup rice vinegar-(Ayu used 3 tbsp)
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon ground cardamom-(Ayu used 4 nos)

garlic-(Ayu used 3 tbsp chili paste) - 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves-(Ayu used 3 nos)
- 6 garlic cloves, minced-(Ayu used 1 tbsp)
- 1 tablespoon canola oil
- 1 cup diced onion
- 1 diced red bell pepper -(Ayu used 2 red chillies)
- 1 diced yellow bell pepper -(Ayu used 3-4 green chillies)
- 1/2 cup fat-free, less-sodium chicken broth-(Ayu used 1 chicken cube +2 cups water)
- 3/4 teaspoon salt +msg
- 1 tablespoon cornstarch-(Ayu used 2 tbsp cornstarch + water)
- 2 tablespoons water
- 1/4 cup chopped cilantro

4 cups cooked brown rice - 1 tomato diced-(Ayu added this)
- 1 tbsp turmeric powder-(Ayu added this)
Preparation
- Combine first 10 ingredients (through garlic) in a zip-top plastic bag. Marinate in refrigerator at least 4 hours, turning occasionally.
- Heat oil in a large skillet over medium-high heat. Add onion + tomato sauté 4 minutes. Add chicken mixture and bell peppers; sauté 5 minutes or until chicken is thoroughly browned on all sides. Add broth and salt; simmer, uncovered, 15 minutes or until chicken is done. Combine cornstarch and water in a small bowl; stir well. Add cornstarch mixture to chicken mixture; simmer 2 minutes or until sauce thickens. Stir in cilantro. Serve over rice.

Fried Spinach

Ingredients:-
300g spinach- chop off roots, wash and cut fine.
450g grated coconut- add 1 cup water to get an equal amount
of milk-(Ayu used 1/4 cup coconut milk + water)
1/2 onion -sliced thinly
1 green chilli - cut slantwise into 5-6 pieces-(Ayu used red)
1/2 tsp brown mustard seeds
1/2 tsp turmeric powder
1 tsp cumin(jintan putih) powder
1/2 tsp chilli powder
3-4 curry leaves
2 tbsp oil
salt to taste
(Ingredients for frying)
Method:-
Heat oil, add ingredients for frying. Fry till onions are a
light brown then add spinach and stir to mixit with the spices. Add coconut
milk and salt and allow to cook, stirring now & then. When spinach is soft and a little gravy is left
remove from heat.
