Nasi Ayam Ipoh

Salam, wanted to post this yesterday but I just couldnt ....got a terrible cramp (women's sickness)..and just felt lying down aje....hai dah tua2 pun masih sengugut ke?..hehe....ish burukkk!!...Anyway, made this Nasi Ayam Ipoh again as we got guest coming over for lunch on Saturday....Mr Hubby's friend & family of  6(the couple & 4 big kids)...I prepared this as this was quite easy and nice..hehe..

I used 2 large chickens for this, and it was gone just like that..hahaha..and ALL for the guests!!!..They seems to enjoy this nasi ayamlah!!!...Of course I felt glad & proud when my business was good,...hehe..but after they left, I told Hasif to buy 1 more chicken cause we ran out of chicken!!!..hahaha..so I boiled the chicken again and fried for our lunch pulak...kikiki..

Bahan Unutk Nasi:-Ingredients for Rice:-
4 mug beras-(4 mug rice)
4 1/2 mug air rebusan ayam-(41/2 mug chicken stock)
2 inci halia*-(2 inches ginger)
3 biji bawang putih*-(3 garlics)
3 helai batang daun bawang (ambik bhgn bawah dia...yg ada buah dia tu sekali)-(3 spring onions, take the bulb below)
1 sudu besar minyak bijan-(1 tbsp sesame oil)
2 sudu besar sos tiram-(2 tbsp oyster sauce)
2 helai daun pandan-(2 pandan leaves)
4 sudu mentega-(4 tbsp butter)

Bahan Untuk Ayam:-Ingredients for Chicken:-
1 ekor ayam-(1 whole chicken)
3 biji bawang putih*-(3 garlics)
1 inci halia*-(1 inch ginger)
3 sudu besar kicap lemak manis-(3 tbsp sweet soy sauce)
2 sudu besar sos tiram dan 1 sudu besar cuka-(2 tbsp oyster sauce + 1 tbsp vinegar)
1 sudu besar madu ( kalau tak dek pun tak pe)-(1 tbsp honey optional)

Bahan Untuk Sup:-Ingredients for Soup:-
air secukupnya-(water to estimate)
4 bawang putih diketuk-(4 garlics crushed)
3 inci halia di hiris-(3 inches ginger sliced)
3 helai batang bawang-(3 spring onions take the bulb)
1 biji sengkuang dipotong dadu-( 1 yam bean diced)
1 sudu besar serbuk lada sulah-(1 tbsp white pepper powder)

Bahan  Untuk Cili:-Ingredients for Chilli Sauce:-
10/15 biji cili burung-(10/15 birds eye chillies)
6 biji cili merah-(6 red chillies)
sedikit halia (ambik dari rebusan)-(a few slices of ginger, taken from soup)
5/6 biji bawang putih-(5/6 garlics)
1 biji limau kasturi/nipis-(1 lime juice)
sedikit air dari air rebusan ayam-(some water from soup)
garam n gula secukupnya-(salt and sugar to taste)
 (Masukkan semua bahan didalam blender dan blend hingga hancur- 
Mix all the ingredients and blend till fine)

Bahan Untuk  Kicap:-Ingredients fro Soy Sauce
5 biji cili burung-(5 bird eyes chillies)
sedikit halia (ambik dari rebusan)-(some sliced ginger from the soup)
4/5 biji bawang putih-(4/5 garlics)
kicap secukupnya-(soy sauce to estimate)
air rebusan ayam secukupnya-(chicken stock to estimate)
tepung jagung di campur dgn air secukupnya (utk pekatkan) -(corn flour mix with water-for thickening)
(Blend semua bahan kecuali tepung jagung. selepas blend isi dalam periuk dan panas kan atas dapur. agak2 dah panas..boleh la di masukkan tepung jagung dicampur air secukupnya utk memekatkan kuah).-(Blend all the ingredients, heat up in a pan, when slight hot add in corn flour which has been mixed with water to thickens the sauce)
Bahan Hiasan:-(Garnishing)
tomato, salad, daun sup dan bawang, timun-(tomatoes, chicnese celery, spring onions and cucumber)

Method:-
Mula2 buat air rebusan ayam...(bahan2 dalam sup) masukkan semua bahan...kecuali sengkuang dan serbuk lada sulah. tutup periuk dan masak hingga didih.Selepas air mendidih, masukkan ayam. biar ia masak selama 20 minit. selepas 20 minit, angkat ayam tadi dan toskan.-(First make the chicken stock, add all the soup ingredients except yam bean and white pepper powder. When boiling, add in chicken and let it cook for 20 minutes. Dish out and drained .)

Method Untuk Nasi:-Method for Rice
Mula2 masukkan majerin dalam periuk elektrik, biar ia mencair, kemudian masukkan bahan*  yg telah di blend. biar naik bau. kemudian masukkan batang bawang dan daun pandan. bila dah layu sikit masukkan sos tiram dan minyak bijan. kacau2 sekejap,kemudian masukkan beras, sedikit garam dan air rebusan ayam. biarkan hingga nasik masak.-( Heat butter in rice cooker till melts, add in blended* ingredients and let it cook till fragrant. Add in spring onions bulb and pandan leaves. When soft, add oyster sauce and sesame oil. Stir well and add in washed rice, salt and chicken stock. Let it cook normally)

Method Untuk Ayam:-Method For Chicken
Ayam yg telah di toskan tadi di masukkan kedalam satu magkok besar. masukkan bahan* yg telah di blend dan semua bahan2 lain...kacau2 rata dan biarkan 1/2 jam. selepas ayam diperap, boleh lah digoring atau di bakar dalam oven. kalau nak goring jgn goring terlalu lama...agak2 kaler dia dah bertukar kehitaman boleh diangkat terus.-(Put drained chicken in a big bowl, add in blended* ingredients and fpllowed by others. Mix well and let it marianted for 30 minutes. Can be fried or baked. Dont fry too long just as long the colour reaches to slightly darkened dish out.)

Method Untuk Sup:-
Baki air rebusan tadi didihkan kembali bersama sengkuang dan serbuk lada sulah. kalau air rebusan dah berkurangan boleh lah di campur dengan air biasa. masak hingga didih. perasakan sup. (Ayu masukkan 1 kuib ayam, garam dan serbuk perasa untuk ini)
selepas semua dah masak, boleh la di makan...cara penyediaan...timun, tomato dipotong nipis2. daun sup dan bawang di potong halus dan di masukkan kedalam sup tadi.-(The balance chicken stock, continue to boil together with the dice yam bean and white pepper powder. If chicken stock has reduced, add more water and let it boil till cook.( I added 1 chicken cube, salt and msg for this)
When all has been cooked, serve wtih sliced cucumber, tomatoes. chicnese celery and spring onions.)

sian hasif kena beli ayam lagi wakakakaka... nxt time mmg kena sediakan at least 3 ekor ayam :D untk akak sefamily jer mungkin dah nak sekor jugak kan? pulak2 yg di bagi makan tu sume BESAR2 dah! hihihi.... mmg leh bukak kedai lah akak ni kikiki... gd luck!

faradean - walkslm, haha..akak gunakn beras basmathi, ada sikit peroi ler fara..hehe

ijayuji- alahai, akak ingat 2 ekor ayam jumbo cukup ler ika, my family makan 1 ekor..so i thought they 1 ekor cukup ler..dah kata datang rumah orang paham2 ler, makan tu..heheh..rupa2nya..memang macam rumah sendiri ler dia org makan..kakaha....hubby signal, suruh keluarkan lagi ayam, akak signal dah ler, ish dia sound lagi suruh keluarkan juga..erm lantak ler, semua aku keluarkan tinggal daun salad aje atas pinggan..hahaha....lepas tu tunggu ler beli ayam lagi, siang baru dapat makan..wakaaakaka..apa2 pun nasi ayam ni memang best lah!!
