Chocolate Muffins


Oh I forgot to upload this muffins, the other day...made for the makan makan lah..ever made this before quite sometimes ago...I made triple amount cause 1 amount only 8 pieces...

If you guys want to know, there was a misadventure when I did this on Saturday night....started to 'godeh'2(prepare and mix) around 12am, when everybody has sound a sleep...mixed, double boiled as usual, add flour and stir well... preheat oven, arranged the muffin cups and scoop mixture into it..filled up to 3/4 cup..ready to put in oven..15 minutes later mixture rose up to the tip and slowly overflow 'melambak'2 ...huhuhu..

Alamak!!!!I screamed softly...(or else the entire people will be awaken)... I keep pulling my hair and swearing myself in the heart..I should have just filled HALF the muffin cups only!!!..I forgot lah!!!!!!..the last time I did was just nice!!!...this time, 20 cups mixture rose up but sink again in the middle!!!(should have taken the pictures).. I was disappointed with myself..the taste was there, but because of the outlook...I THROW!!!! everything into Mr Bin (tong sampah)..left with 8 cups which was outside..I baked again this time OK,..2 am, I godeh2 again..this time filled up only half..oklah..I said to myself...slept at 4 am..

The below picture was decorated by Mr Hubby, I was busy in the kitchen, he took his own initiatives by making 'initials' of his siblings names and paste it on a toothpick and poke it on my muffins (since his siblings are coming)... I quietly took out the 'decorative toothpicks' after some of the guest thought that the muffins are just for posing only..hehehe, baru jalan my muffins tu..(kalau tak orang ingat for display aje)..

Ingredients:-
200g cooking chocolate
70g butter
2 eggs
50g Castor sugar
60g plain flour
1 tsp baking powder

Method:-
Melt chocolate using double boiler method. Add in butter.Stir till butter melt.
Preheat oven 170c. In another bowl add eggs and sugar. Beat with mixer . Add eggs to chocolate mixture. Stir well.
Sift flour and baking powder into chocolate mixture. Stir again. Scoop mixture into cups fill up till 1/2 full.( I added chocolate chips on top) .Bake for 20 minutes. (Beware do not fill too much as the mixture will rise!)

After baking, maybe the muffin will be slightly soft(cause little usage of flour) but when its cooled it will be hardened by itself. So if after 20 minutes still soft don't have to bake again.

Makan Makan For Close Families

Still in Raya mood... just got the chance to update today...Saturday went out visitings to those houses that we didnt managed to visit during the holidays...

Yesterday, my in laws came over to our house ...'kecoh'(very noisy) with all the jokes and laughters..as if my house is the only house celebrating hari raya in my area..hahaha..anyway it was fun and exciting as very seldom we get to gather as a family...this year we didnt have a that 'open house' as previous years as both Mr Hubby and me are quite busy handling some important events in the coming weeks and days....
I am in a midst of preparing for my niece wedding cupcakes which will be held this Sunday..

As usual I am very stressed!!! its like as if I am preparing for my own 'wedding'..Oops, ..hehehe. Mr Hubby is flying off to Australia somewhere in October, and the kids are sitting for their exams somehere there too... so by the time all of this over Hari raya also over..hahaha..

Below are what I prepared for the makan makan...I wanted to make something different( to me lah), not sure about others, to cook something 'simple' but yet 'accept

able'..? I opt not to cook noodles, nasi beriani, sayur lodeh and all those commonly served when ever I go to open houses.. can I say that I got sick of lontong, mee rebus and all the rendangs which you can find during the first and second day of raya..so I 've decided to serve something which is an everyday menu? (this is just my opinion ok..dont quote me ah!)

My buffet setting, again lazy to bring out the buffet set..just laid on the table and self serve.. makan makan starts at 2 pm and ended at 11 pm..wooh!!..tired wah cakap sama lu..

Shabsuka the main dish.. in this big aluminium foil I cracked 20 eggs.. I made 2 nos of this and left with half tray ..altogether I used 4kg of minced beef, 40 eggs, 10 red chillies, 10 green chillies, 13 big onions, 10 tomatoes, 1 small packet fried shallots and etc, etc.. basically I have never made shabsuka this much..hehehe..

2kg of buttered prawns, I used, 1/2 curry leaves, 20 birds eyes chillies and 1 butter for this menu. At the end left only 10 pieces..huhu..

Ayam Goreng Berempah Serai.. hot favourites.. 3kg chicken wings..finished with no trace..only left the 'kerak'(crispy stuff)..and curry leaves...

Nasi Goreng Kampung.. maybe some cant imagine why I served nasi goreng..hehehe..but believe me..this fried rice HABIS licin berkilat (finished with shining cleaned aluminium foil..)!!!!...
I used the Maggi 'Perencah Nasi Goreng Kampung' and just added some chicken meat and kangkung, fried some anchovies and minced it(tumbuk pakai batu lesung)and mixed them up!!!..hehehe

Kids Menu... for those kids that dont eat pedas(hot) dishes.. I bought 3 packets shoestring fries and 2 packets wedges... Habis!!!..cause big kids also lanyak..hehehe


This one I bought 7 packets Master's brand 'Black Pepper Coctail'.. I boiled it instead of fried it..before guest come my kids already attacked 2 packets... so left with 5 packets for guests..


French loaves, also nak masuk frame...Fresh from oven, so we didnt have to toast it cause it was still warm and crispy but yet soft in the inside....
I told Mr Hubby to buy 10 pieces he bought 15 pieces..
Ha engkau, I told him ini nak buat bantal peluk for him pun boleh..hahaha..he just smiled..
today left with 3 pieces...never mind lah can eat for breakfast..

Orange Macan Roll


Orange Macan Roll was the hot favourite... already gone on the first day hari raya...'cut, served and finished'.....'cut, served and finished'....till I've got to hide a few slice for myself, cause I also like this cake..heheheh..

Ingredients:-
120g melted butter
8 nos. egg yolks
4 nos. egg white
80g fine sugar
75g plain flour
30g milk powder
1 tsp ovalette
1/2 tsp chocolate emulco
1/2 tsp coffee oil (I added coffee emulco)
1/2 tsp orange emulco
a drop of orange colouring(optional)- I added a few
1/2 tsp baking powder(not in recipe but I added myself)

Method:-
Beat egg yolks, egg whites, sugar, flour, ovalette and milk powder together until thick and fluffy.
Pour in melted butter and mix till thoroughly mixed.
Scoop out 2 ladle spoonful of batter into a bowl. Add in chocolate paste and coffee oil and stir till well mixed. Place into a piping bag. Add in orange emulco and orange colouring into the balance batter and divide into 2 portions. Pour into 2 nos. 10" x10" square trays.
Pipe patterns onto the orange batter, write the letter 'C' on top. Bake at 190C for about 12 minutes. (My oven I used 175C for 12 minutes.) Leave to cool. Spread butter cream(I used chocolate butter cream) or jam on top and roll tightly. Leave it in the fridge to set and then slice.

Rolled Oats Cookies


I guessed this is my last cookies recipe, cause after this I am going to start on my 'cake baking session'... my Marbled Mocha Drops has already left with 1 bottle, I have to tell Hasif to stop snacking or we end up with1 type less cookies as I am damn lazy to make another batch...

For this recipe, the method was to drop on tray like making the chocolate chips cookies, but I wanted to make the cookies a bit 'neat' so I used the measuring teaspoon to scoop and I pressed it a bit to get the shape and drop it on the tray. In the recipe there's no oven temperature given, so I adjusted to my own oven setting, which was about 165C and bake for 10 minutes. Please adjust to your own oven setting.

Ingredients:-

375g butter
1 tsp vanilla essence
6 egg yolk
2 cups fine sugar- blended
11/2 cup self raising flour
300g almond/cashew nuts (chopped coarsely- roasted for 10 minutes)
1kg rolled oats( roasted for 10 minutes)

Method:-
Beat butter, sugar and vanilla essence till soft. Add in eggs one by one and mix till thick. Add in flour which has been mixed with the almond/cashew nuts. Lastly add in rolled oats and mix till incorporated. Take a bit of the mixture bit by bit and lay on baking tray and bake till golden yellow.

Chocolate Hedgehog Slice


Another chocolate recipe...hehehe..some of you might 'vomit'..if were to come to my blog right?..bored of looking at chocolate all over..hahaha..what to do.. I cant live without chocolate..

Ingredients:-
250g chocolate cream biscuits, finely crushed
1/2 cup desiccated coconut
1 cup pecans, roughly chopped
1 tbsp cocoa powder, sifted
100g dark chocolate, chopped
80g unsalted butter
1 tbsp golden syrup
1 egg lightly beaten

extra pecans, for decorations
extra 60g dark chocolate melts

Method:-
Line Base and sides of shallow 30 x 20 cm rectangular tin with foil.
Combine biscuit crumbs, coconut, pecans and cocoa in medium mixing owl. Make a well in the centre.
Combine chocolate, butter and syrup in small heavy-based pan. Stir over low heat until chocolate and butter have melted and mixture is smooth. Remove from heat. Pour combined chocolate mixture and egg onto dry ingredients. Using a wooden spoon, stir until well combined. Press mixture evenly into prepared tin. Refrigerate 30 minutes or until set.

To make icing:-
Place chocolate and butter in small heat proof bowl. Stand over pan of simmering water. Stir until chocolate and butter have melted and mixture is smooth. Cool slightly. Spread mixture evenly over slice base. Refrigerate until set. Remove slice from tin. Cut into small squares with sharp knife. Decorate squares with pecans dipped in extra melted chocolate.
*Store slice in airtight container in the refrigerator for up to 1 week.

Marbled Mocha Drop


When I showed to Hasif a few of the recipes that I've got from this M&M website, he pointed to this recipe cause its 'chocolate' colour..haha...well, for sure this is NOT a disappointing recipe!!...Its a MARVELLOUS recipe .... try it!!!

Ingredients:-
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened (170g)
2/3 cup granulated sugar (150g)
2/3 cup firmly packed light brown sugar (150g)
1 large egg
1 teaspoon teaspoon vanilla extract
2 tablespoons instant coffee granules, dissolved in 1 tablespoon of water
1/2 cup coarsely chopped nuts (100g)
1/4 cup unsweetened cocoa powder (50g)
1 cup M&M’S® MINIS® Milk Chocolate Candies

Method:-
Preheat oven to 350°F (175C). In a small bowl, combine flour, baking soda and salt; set aside. In a mixing bowl, cream together butter and sugars until light and fluffy; add egg, vanilla and dissolved coffee granules. Blend in flour mixture, nuts and M&M’S® MINIS® Milk Chocolate Candies.
Remove half the dough to a small bowl. Blend cocoa powder with dough remaining in the mixing bowl. Combine the doughs and mix together just enough to marbleize, about 4 strokes.
Drop a heaping teaspspoonfuls about 2 inches apart onto ungreased cookie sheets. Bake 10 to 12 minutes just until set; do not over bake. Cool 1 minute on cookie sheet; remove to wire rack until completely cooled. Store in tightly covered container.

Honey Cornflakes Cookies


I made triple amount for this recipe and I've got a really backache while doing it...at first I tried to be 'gentle' by scooping the mixture using spoon... but as I go along the 'want to finish quickly' feeling made me use my hands... of course I used the disposable plastic gloves lah ok..hehe

Ingredients:- (A)

100g cornflakes
100g crispy bubble rice(optional)
100g chopped almond/nuts (roasted)

(B)
110g butter
90g fine sugar
5-6 tbsp honey

Method:-
Mix all ingredients B and put to a slow heat for a few minutes. Stir well. When all the ingredients has dissolved, add in A and stir till Incorporated. Lay small paper cups in a small muffin tray and scoop 1 tsp of mixture. Pre heat oven and bake at 175C for 7 minutes. Let it cool on wire rack the store them in an airtight container.

*You can add your preference for the decorations. As for me I used chocolate rice.


Biskut Seri Dewi


Chocolate lover like me, anything that I do must have chocolate..heheheh..even for this cookies, theres chocolate rice in it and chocolate ganache for decorations...for this year, my cookies selection are mostly 'chocolate' theme..alah, anyway all simple recipe..hehe

Ingredients:-
140g butter
70g caster sugar
1/2 tsp vanilla essence
1/2 tbsp hazelnut chocolate paste (nougatin paste) - can use nutella
1 egg yolk
100g plain flour
100g self raising flour
60g chocolate rice
70g dark cooking chocolate melted for decorations
Method:-
Mix butter, sugar and vanilla essence till soft and add in hazelnut chocolate paste.
Add in egg and mix well. In a different bowl, mix the two flour and add into butter mixture. Stir well.
Add in chocolate rice and knead to form a dough.
Roll out dough to 7 mm thick and cut to preference. Arrange cookies on a baking tray that has been greased or laid with greaseproof paper and brush egg yolk on top of the cookies surface. Bake at 160C for 20 minutes. Let cook and decorate with melted cooking chocolate.
*Besides cooking chocolate, you an use any types of nuts for this cookies.

Mee Tomato - 21st Day Iftar

Huhuhu!!!...21st day iftar..still no cookies!!!!!!!!!!!!I felt like knocking my head on the wall!!..when I was about to get the 'mood'..suddenly, the 'lazy virus' start to come...imagine, while flipping at some of the 'potential' recipes I can just doze off!!!..alamak...please somebody donate your cookies to meeee!!!..

Made this for iftar..this recipe is very suitable for kids and beef lover (like Mr Hubby)...recipe from Kak Asma(yang tengah preggy and senyap aje sekarang ni, apa khabar kak..hope everything ok)..thank you kak for the recipe..

Ingredients:-
1 packet spaghetti (boiled w/salt and oil and drained)
1/2 kg beef sliced and boiled
15 dried chilies*
1 big onion*
5 shallots*
4 garlics*
1 tomato dice
1 medium size tomato puree
slices of cabbage to estimate
water
salt and MSG to taste

Garnishing:-
1 cucumber sliced like in picture(skinned, sliced thinly around the cucumber leaving the seeds behind)
Chinese celery and spring onions sliced
fried shallots

Method:-
Heat oil in wok and saute blended* ingredients till oil goes up the surface. Add in water, beef and beef stock. Let it simmer. When bubbling, add in tomato puree, diced tomato and sliced cabbage. Add in salt and MSG to taste. Let the gravy simmer till thickens slightly and turn off heat.
*This menu goes well with spaghetti noodles compared then other noodles..

Keledek Goreng Tepung

Side menu for yesterday iftar..sweet potato fritters.. my mum recipe, just cut sweet potatoes to strips like fries, mix in plain flour , water and salt. Scoop a few strips together and deep fried till golden yellow . Ready...
