Siamese Thai Noodles aka Mee Siam Kuah



This is another version of mee siam kuah recipe which I've got it here. This recipe used coconut milk in the gravy. Where else my normal mee siam kuah I dont use coconut milk at all.. it is something like 'Indian Mee siam' here in Singapore. Anyway, I just made half the ingredients and adjusted here and there ...I didnt put that amount of coconut milk in my gravy but just a few tablespoons to it...overall..not bad..

Please also adjust to your household needs and preference ya..


Ingredients:-
2 lb rice vermicelli [lo mein noodles]-(roughly 900g)- (mee hoon dalam anggaran 900g)
2 lb fresh whole shrimp, reserve shell and heads, for stock-(anggaran 900g udang ambil kulit dan kepalanya untuk stoknya)
3½ cups water-( cawan air)
salt to taste-(garam ikut rasa)
1 cup cooking oil, peanut or veg oil-(1 cawan minyak masak)
10 cloves garlic, chopped-(bawang putih cincang)
6 soy bean cakes, diced-(tauhu potong dadu)
2 tbsp salted soy beans, mashed to a paste or Miso paste-(sdb taucho dilenyek)
4 tbsp light soy sauce-( kicap cair)
1 lb fresh bean sprouts-(taugeh)
6-8 stalks scallions, cut into 1 inch lengths(daun kuchai potong 1 inchi panjang)
20 shallots, thinly sliced, fried golden brown-(bawang merah hiris nipis goreng hingga garing)
4 eggs, hardboiled, quartered-(telur rebus)
6 red Serrano chilies, seeds, thinly sliced diagonally [optional]-(chili merah)
10 limau kasturi [kalamansi limes], cut into halves-
[Substitute: kaffir or key limes cut into small wedges]


Ingredients for SAUCE :Bahan2 Kuah:-
2 tbsp cooking oil, peanut or vegetable oil-(minyak masak)
12 cloves garlic, pounded-(bawang putih)
3 tbsp or to taste, chili paste( chilli kisar)
3 tbsp salted soy beans, mashed to a paste or miso paste(taucho dilenyek)
3 tsp sugar(gula) 3½ cups coconut milk(santan)
½ cup tamarind paste [made from 3-3½ oz tamarind pulp mixed well with ½ cup hot water and then strained to remove seeds]-(1/2 cawan air asam jawa- dari 3-31/2 oz asam jawa campur dengan 1/2 cawan air masak)

To Prepare Sauce :Cara untuk kuah:-
Heat on high, add garlic, chili paste, salted soy bean or Miso paste, stir-fry for a min or so
Add sugar, tamarind paste, coconut milk, reduce heat to med-low,
Simmer till oil starts to float on top, add salt to taste, keep gravy hot on low-med heat, for serving. Dish out into a gravy boat when serving-(Dengan menggunakkan api yang besar, masukkan bawang putih, chili kisar, taucho atau miso paste tumis sekejap. Masukkan gula, air asam jawa, santan dan kecilkan api ke api medium. Biarkan sekejap sampai garing. Masukkan garam secukup rasa. Panaskan kuah bila mahu menghidang.)

To Prepare :
Cara Untuk Mee:-
Soak dried rice vermicelli [lo mein] in hot water till al dente, drain, run under cold running water, drain well, set aside. Remove shells from shrimp, reserve shells & heads, roughly pound. Bring 3½ water to a boil, add shrimp shells, simmer, reduce to 1 cup of stock, strain and discard shells & heads, add salt to taste. In a wok, heat 1 cup of oil, fry shallots till golden brown, drain on paper towels, set aside for garnish. Remove all but 2 tbsp of oil from wok, add garlic, stir-fry till golden brown and crisp. Add shrimps, soy bean cakes,2 tbsp salted soy beans or Miso paste, stir-fry 1-2 mins. Add shrimp stock, soy sauce, bring to boil, reduce heat to med, cover, simmer 5 mins. Add noodles, stir fry for 3-5 mins.Add bean sprouts, scallions, salt to taste, stir fry 1-2 mins, turn off heat. Dish noodles into individual bowls. Garnish with hardboiled eggs, fried shallots and fresh sliced red chilies [optional]. Serve with gravy boat on the side, for pouring a little over noodles while eating - a last minute squeeze of lime brings it altogether -( Rendam mee hoon dalam air panas dan bilas dibawah air yg sejuk dan toskan. Ketepikan. Kopek kulit dan kepala udang dan tumbuk kasar. Masak 31/2 cawan air dan masaaukkan kulit dan kepala udang tadi. Biarkan ia renih sebentar. Tapis dan ambil 1 cawan airnya untuk dibuat stok dan bubuh garam sikit. Dalam kuali yang lain masukkan 1 cawan minyak dan goreng bawang merah hingga garing. Angkat dan toskan. Ambil 2 sudu besar sahaja dari minyak tadi dan tumis bawanng puith hingga garing. Masukkan udang, tauhu, 2 sudu besar taucho dan kacau selama 1-2 minit. Masukkan air udang, kicap cair, dan didihkan selama 5 minit. Masukkan mee dan kacau selama 3-5 minit. Masukkan taugeh, kuchai, garam dan sebuk persa dan kacau selama 1-2 minit. Matikan api.Hidang kan bersam telur rebus, bawang goreng dan chili merah(optional)dan perahan limau kasturi)

Menggugat keimanan betoila Ayu....Akak dah la patah kaki....udang dah habis..tinggal sotong jer...dengan ikan....huhuhu...nangis depan umah ni jer lah..kot2 tuan umah bagi semngkuk!
