Masala Thosei - 11th Day Iftar

Indian menu for our 11th day iftar.. didn't make the full set of thosei dipping cause I just preferred the thosei masala and the sambar thosei...kenyang woh, just ate 1 thosei already felt the tightness in my tummy + the few cups of coffee that I drank...

I didnt make the thosei using the below method, cause I already bought the ready mix thosei flour... those who are overseas and cant get this flour, can use the method below to make thosei OK...Happy Thosei..ing ...

Ingredients For Thosei:-
11/2 cup uncooked rice (washed, and soaked with water for 5-6 hours)
1/2 tsp fenugreek(halba)
11/2 cup water
2 tbsp cold rice (soaked together with the uncooked rice)
or 2 tbsp yogurt
1/2 cup black chik pea(ulundu) skinned- (cleaned, washed and soaked for 5-6 hours)

Method:-
Drained uncooked rice and blend together with fenugreek and 1/2 cup of water. Blend till fine. Add in black chick peas and another 1/2 cup water. Blend again. Add in cold rice or yogurt. Blend again till is incorporated and thick. Pour another 1/2 cup of water and add in 1 tsp salt. Stir well. Let it for 5-6 hours.

Method to Cook the thosei:-
Heat a flat pan.(I used a non stick pan). Grease some oil to the pan using a cloth. Pour 1-2 scoop of batter and make a circular motion using the base of the ladle. Let it cook for a while. (I covered the pan for a while).
To make a Masala Thosei, add in some filling onto cooked thosei and fold into two. Serve with paceri kelapa, sambar and tulu.


Ingredients for Masala Thosei filling:-
1/4 cup dhal (washed and soaked)
3 cups water
1/2 tsp turmeric powder
1 garlic sliced thinly
1/2 big onion sliced
2 green chillies cut to a few parts
1 sprig curry leaves
salt and MSG to taste
(Mix all the ingredients in a saucepan and put to boil)

1 carrot diced
10 french beans or 3 tbsp green peas
3 potatoes( boiled and diced)
2 green chillies
some sliced cabbage
1 tsp chili powder
1/2 tsp cumin powder
1/2 tsp fennel powder
1 tsp salt
1 tsp tamarind pulp- (2 tbsp water)

Method:-
When dhall have soften, add in carrots, french beans, potatoes, cabbage and green chillies. When vegetables has soften add in chili powder, cumin, fennel, tamarind juice(a little bit only) and salt. Cook the gravy till thickens.

Ingredients for saute:-
4 shallots sliced thinly
1 tsp mustard seeds
3-4 dried chillies cut
1 sprig curry leaves
2 tbsp oil

Method:-
Heat oil and add in saute ingredients. Stir till soft. Pour the mixture into dhall /vegetables gravy. Stir well and let it simmer for a while and turn off heat.

This is the ready mix Thosei flour, that I bought. Just add water and ready to go..
