Peach Muffins

Made this moons ago..way before Ramadan..but got no chance to post . Felt that I should have posted more of iftar and sahur menu then muffins during that period. Well actually I made this for Mr Hubby's colleague during the Youth Olmpic Games Event, as they were busy preparing on the ground behind the scene..nothing special actually just that Mr Hubby requested me to bake something for the guys for their tea break during one of the days..

Since I have got so much peaches in the can, given from my cousin, I decided to try out this recipe..I made 2 batches for them, cant really remember how many I managed to bake but it was around 30++ . 
Mr Hubby brought over, and he told me within minutes the muffins was gone!!...hehe..
As usual, he never reveal it was me who baked them when he was asked...:-)
Recipe was from the same  Jessie @ Hearty Bakes that I got the Chocolate Chiffon w Choc- Ganache recipe from. Thank you Jessie. I put up the recipe here for sharing ya.

Ingredients:
180g unsalted butter (melted)
220g castor sugar (reduced to 200g) -(Ayu used 170g)
1/4tsp salt
2 eggs (lightly beaten)
250g low protein flour-(Ayu used cake flour)
2tsp baking powder
80g ground almond
100ml fresh milk-(Ayu added another 50ml)
1 small can of peaches (diced)

Methods:
♥ Preheat oven to 180°C
♥ Prepare muffin tin lined with paper cups
♥ Sieved together low protein flour, baking powder, salt in a bowl.
♥ Add in ground almond and set aside
♥ In another bowl, mix melted butter with sugar, beaten eggs & milk. Stir till well combined
♥ Pour liquid mixture into the dry ingredients. With the spatula, gently fold all the ingredients to form a wet batter
♥ Add in diced peaches, stir lightly
♥ Spoon into paper cups and bake for about 25mins or till cooked
♥ Leave muffins to cool on cooling rack

zoe - thanks zoe, if your boy likes to eat peaches then its ok to make this for him..cause for my kids they dont like peaches so when they see this and not chocolate they just waved their hands and said no..hehe
