Bittergourd with Taukwa

 

 Bittergourd one of my favourite veggies...of course when you cooked it the right way..hehe, nothing to describe this dish just thought fried it this way instead the normal fried with eggs..

 Ingredients:-
1 large bittergourd-cut in half then cut each half into slices about 0.5cm thick, sprinkle with salt and let it stand for about 15 minutes, wash-(1 biji pria besar-dipotong dua dan hiris nipis setebal 0.5cm, gaulkan dengan garam dan biarkan selama 15 minit dan cuci)
300g shrimps-(udang)
2 large pieces haed beancurd-cut into squares and deep fry-(2 keping taukwa dipotong dadu dan goreng)
1 cup coconut milk-(1 cawan santan)
salt to taste-(garam)
4 tbsp oil-(4 sudu besar minyak)

*10 dried chillies-soak to soften-(10 cili kering direndam)
*1 medium sized onion-(1 bawang besar size sedang)
*1 clove garlic-(1 biji bawang putih)


Method:-
Heat oil, add *ground ingrdients and salt and fry till fragrant. Add shrimps and fry for a few minutes. Add taukwa and coconut milk, and bring to the boil. When gravy thickens add bittergourd and cook till fairly dry, stirring now and then.-(Panaskan minyak dan tumis bahan *kisar hingga wangi. Masukkan udang dan biarkan seketika. Masukkan taukwa dan santan dan biarkan ia mendidih. Bila kuah sudah pekat masukkan pria dan masak hingga agak kering dan kacau sekejap2.)

Two Ways Molten Chocolate Cake


This is the second time that I made molten cakes using this recipe. Rich chocolaty, sweet taste inside and outside for me....sources was from the internet... I used the metal rings for the 'apam mould' for this..made a few, nice to eat when its warm as the ganache will ooze out...also nice when its cold, as it turned into a soft, chocolate filling cakes...hehe

Ingredients for ganache:-
120g semisweet or bittersweet chocolate, 62% to 70%
28g butter
45g heavy cream
1/8 tsp salt

Ingredients for Cake:-
156g semisweet or bittersweet chocolate, 62% to 70%
84g butter
4 large eggs separated
1/4 tsp salt
3 tbsp sugar

Method For Ganache:-
To make ganache, combine chocolate, butter, cream and salt in a bowl and melt over a saucepan of simmering water on the stove. Stir occasionally to make sure it melts evenly.Put the filling into a container and place in the refrigerator for about an hour until it starts to set up. You can also place it in the freezer to speed up the process. When ganache is firm enough to scoop, use a spoon or cookie scoop to make 3/4" round balls. Place in a container and store in freezer to keep them firm while you make the cake.

Method For Cake:-
Preheat oven to 175C. Line a couple baking sheets with parchment paper. Take 21/2" diameter metal rings and butter and sugar the insides well. Arrange rings on the baking sheets. Place the chocolate and butter in a bowl and melt over a saucepan of simmering water on the stove, stirring occasionally. When chocolate and butter are fully melted and combined remove from heat and let cool until warm. Whisk egg yolks, salt and sugar together in a large bowl. Pour about a third of the melted chocolate into the egg yolks, whisking contantly to temper the eggs. Pour in the rest of the chocolate and whisk to combine.
In a stand mixer with the whisk attachment, whip the egg whites until medium peaks form - do not over whip. Carefully fold in about half of the egg whites into the chocolate batter to lighten it. Then fold in the rest of the egg whites, taking care not to deflate them too much.


Fill the rings a little less than halfway up with the batter. Place a ball of ganache in the center of the batter. Cover with more batter, filling the rings 3/4 full - the cakes will rise when baking like a souffle so dont fill them too high or they will spill over.


Bake cakes for 10-12 minutes. the cakes should be done - tester inserted in the side should comes out with a few crumbs, but the centers should have melted. You may want to test with one cake first to gauge how long the right baking time will be. Remove cakes and let cool on racks for a couple minutes. Use a wide metal spatula to move the cakes onto serving plates, then carefully remove the rings.

Udang Ungkep

Also kids menu...sedap!!..to us lah ya...thought there is only 'Ayam Ungkep', then when I saw this recipe, straight away wanted to try..tak menyesal...I used medium size prawns aje and deshelled them so that the kids can eat without me peeling for them when eating...

Ingredients:-
1 kg udang besar di bersihkan(saya gunakn udang medium size aje)-(1kg big size prawns cleaned(I used just medium sizes one)

Bahan kisar kering:-(Blended dry ingredients)
2 sudu makan ketumbar,-(2 tbsp coriander)
1 sudu teh jintan kasar-(1 tsp fennel)
(saya gunakan serbuk aje bahan diatas jadi tak payah kisar)-(I used the powdered one so no need blend)

Bahan kisar basah:-(Blended wet ingredients)
3 ulas bawang putih,-(3 garlics)
5 ulas bawang merah,-(3 shallots)
2 sm halia,-(2cm ginger)
1 sm lengkuas,-(1 cm galangal)
1 batang serai-(1 lemon grass)
2 tangkai daun kari,-(2 sprigs curry leaves)
sedikit garam , dan serbuk kunyit-(salt and tumeric powder)
1/2 cawan minyak-(1/2 cup oil)

Method:-
Perapkan udang dengan semua bahan, ketepikan. Panaskan minyak, masukkan udang, kacau dan tutup.
Air udang akan keluar, biarkan kuah hampir kering (lebih kurang 5-6 minit dengan api sederhana), ketika ini udang sudah pun masak. bolehlah di hidangkan.-(Marinate prawns together with all the ingredients. Heat oil, add in mprawns, stir and cover. The prawns will produce juice, let it thickens about 5-6 minutes using medium heat. By this time prawns are already cooked,  ready to serve.)
