Cucur Ubi Kayu

First time dengar & buat cucur ubi kayu ni..boleh tahan sedap juga rasanya..kalau dapat ubi yang empuk lagi sedap..tapi ubi kita ni macam kajut gitu..huhu..rangup bila digoreng memang ada rasa ala2 masalodeh..bahan2 tu tiada sukatan so kena adjust ikut selera sendiri ya.. Thank you puan punya recipe minta dipanjangkan disini pula..
Cucur Ubi Kayu

Bahan2 untuk (4-5 orang)
  • 1/2 kg ubi kayu (dibuang kulit dan dipotong kecil)
  • Jintan manis-(Ayu used 1/2 tsp)
  • Jintan putih-(Ayu used 1/2 tsp)
  • Udang kering-(Ayu kisar/tumbuk)-(Ayu used 3 tbsp)
  • Cili kering (dipotong kecil) 
  • 1 bawang besar potong dadu kecil-(Ayu tambah)
  • Daun kari (dipotong kecil)
  • Garam
  • Serbuk kunyit

Cara-cara

  1. Blend ubi kayu yg telah dipotong kecil tadi dengan sedikit air (agak2 dapat melumatkn ubi kayu sahaja)
  2. Lepas blend, toskan ubi kayu tadi supaya air yg ada dapat dikeluarkan
  3. Selepas ditos, bahan-bahan di atas dicampurkan ke dalam ubi kayu tadi, masukkan garam secukup rasa dan sedikit serbuk kunyit untuk cucur nampak lebih cantik dengan warna kekuningan
  4. Digaulkan ubi kayu dan bahan-bahan tadi sehingga sebati dan bolehlah dijemput2 untuk di goreng dalam minyak yg telah dipanaskan
  5. Rasanya saling tak tumpah seperti masalodeh@wadei yang sangat rangup dan sangat sedap. Selamat mencuba!

Singgang Tumis Asam Jawa

Actually lauk ni adalah gandingan dengan ayam masak bawang putih hari tu..also lauk dibulan Ramadan..Since lauk ayam tu tak berkuah dan senior citizen tak nak makan ayam, kita masak lauk ni for anak2 ambil kuahnya dan isi ikan untuk orang2 dewasa..Biasalah kan..lauk simple2 ginilah yang laju aje time bulan puasa...Terimakasih buat CheMat for sharing lauk yang simple yet sedap ni ..akak mohon dipanjangkan disini pula ya..


Singgang Tumis Asam Jawa
BAHAN-BAHANNYA :-)
4 ekor ikan kerisi, buang sisi, siang, cuci bersih dan toskan
1 batang leek, kerat kecil dan rendam
1/2 cawan jus asam jawa
1 kiub pati ikan bilis "maggi" (optional)
Air secukupnya
1/3 camca teh serbuk kunyit
Garam dan secubit gula
4 biji bawang merah, hiris
3 ulas bawang putih, diketuk
2 biji cili merah, belah 2 setiap satu-(Ayu gunakan beberapa cili padi diketuk)
3 tangkai daun sup, hiris halus
1 biji tomato belah 6

CARA MEMBUATNYA :-)
  1. Ikan dilumur dengan sedikit kunyit dan garam, kemudian goreng, tapi jangan garing, cuma embal2 sahaja. Ketepikan.
  2. Panaskan sedikit minyak dalam periuk, tumis bawang merah, bawang putih dan serbuk kunyit hingga harum. Tuang air secukupnya. Masukkan leek dan juga kiub ikan bilis, kacau dan biar mendidih.
  3. Masukkan ikan, dan juga jus asam jawa. Tambah garam secukup rasa dan secubit gula. Bila mendidih, masukkan hirisan daun sup (tinggalkan sedikit untuk hiasan), dan juga tomato. Masak sekejap, rasa dan jika ok boleh matikan api. Hidangkan dengan menabur baki daun sup tadi..

Peria Goreng Telur

Peria goreng telur ni actually kita dah selalu buat tapi kita main campak2 aje..tak ada the exact recipe for it..if you notice peria goreng telur yang lepas2 tu tak ada sukatan dan tak ada recipenya..so this time khas untuk siapa2 yang ingin mencuba recipe peria goreng telur boleh lah cuba sebab dah ada sukatanya..baiasa pun bahan2 yang kita gunakan serupa macam CheMat goreng sayur ni..cuma recipe asal menggunakan bendi tapi kita tukar ke peria..Terimakasih Mat akak letakkan recipenya disini juga ya..

Bendi Goreng Telur
BAHAN-BAHANNYA :-)
250 gram kacang bendi, cuci dan toskan-(Ayu gantikan dengan peria- dihiris dan direndam dalam air garam seketika)
1 camca besar sos tiram
Sos ikan secukupnya
Secubit gula
1 camca besar jus asam jawa
1 biji telur, dipukul sedikit
1 biji bawang besar saiz sederhana*
2 ulas bawang putih*
1 biji lada merah*
7 biji cili padi merah Thai*
1 camca besar udang kering, rendam dan toskan*(*ditumbuk lumat)
Sedikit air
Hirisan daun bawang untuk hiasan
Bawang goreng untuk hiasan

CARA MEMBUATNYA ;-)
  1. Bendi hiris serong nipis2. Ketepikan. Panaskan minyak dalam kuali, tumis bahan tumbuk lumat hingga harum, tambah sos tiram, jus asam jawa dan secubit gula, kacau rata dan tuang air.
  2. Bila mendidih, masukkan bendi tadi, gaul rata dan masak hingga bendi lembut. Curah telur pada bahagian tepi kuali, bila mengeras sedikit, gaul rata bersama bendi. Tambah sos ikan secukup rasa. Masak hingga kering, rasa dan jika ok boleh matikan api. Hidangkan dengan menabur hirisan daun bawang dan bawang goreng..

Chocolate Salted Caramel Cake

Assalam, this was the cake that I made for Hasif's birthday hari tu...sebelum kita buat kek birthday untuk bujang kita ni, I did asked him what type of cake he wants..so dia startlah cakap 'Acip tak nak kek yang ada cheese, tak nak kek yang ada cream or buttercream..basically I just want normal cake & chocolate saja!!'..alamak ai..kalau macam tu your cake tak boleh larilah dari kek2 yang selalu mama buat dulu which are steam chocolate cake, moist chocolate cake dan sewaktu dengan nya...aahlah ma dia jawap..uish..(dalam hati tak dapat lah mama nak mengtest new recipe ..heheh)..

My mum pulak menyampuk, aahlah kau buatlah kek yang semua orang suka makan..kalau buat kek yang semua orang suka makan, sekejap aje dah habis...(dalam hati memang confirm tak boleh nak expore new recipelah nampak gaya ni..hahaha)..TAPI, dalam diam2 kita tak ulik nak cuba juga recipe yang lain, recipe yang belum pernah kita cuba, of cos tawakkal lah juga..& get prepared kena bombast kalau tak menjadikan...I believe kalau kita tak cuba sampai bila pun kita tak akan tahu sesuatu pembaharuan ..kalau dah cuba barulah boleh cakap sedap ke tidak...betul takkk...kalau sedap boleh buat lagi kalau tidak buat bodoh saja..hahaha...
Ok base on the requirements dont want cream or even buttercream I managed to find this recipe, that only used chocolate & caramel aje as the filling & toppings..bascially sikit lebih kurang macam his last birthday cake Triple Chocolate Caramel Cake, cuma this time, diletakkan sedikit garam, whipping cream & sour cream, giving the cake a very rich chocolatey taste!!..while decorating I've got stuck sebab tak tahu nak decorate kek tu macam mana sebab kita nak gunakan buttercream Hasif cakap tak nak..so terpaksa gunakan chocolate frosting tu juga...

This cake is veryy nice!!! Even my mum agreed...memang tak menyesal mencuba recipe ni..
boleh dibuat lagi lain kali untuk birthday siapa2 yang tak suka letak cream or buttercream kat atasnya tu...Managed to potong  & serve with Hasif & Iqram's  tuition teachers, even a friend that came over asked for a slice to bring back for her son!!!...
Maaf lah ingatkan nak translate kan ke bahasa Melayu, tapi macam tak sempat pulak..
As for the sour cream tu kalau ditempat teman2 tak ada jual yang dah siap, boleh buat sendiri dengan menggunakan (1 cawan plain yogurt + 3 sudu besar  mentega cair)
Oh yes, kek ni menghasilkan kek yang agak tinggi  & besar juga..so bila potong tu asik nak tumbang aje..hehe..tapi muai dan penting sedapppp!!!!!

Chocolate Salted Caramel Cake

Double Chocolate Layer Cake
3 oz semi-sweet chocolate, chopped [I use a combination of bittersweet and semi-sweet]-(Ayu also used mixture of dark & semi sweet chocolate 90g)
1 1/2 cup [120 g] cocoa powder
1 1/2 cup hot brewed strong coffee-(Ayu used 2 packets of 3-in -1 instant coffee +11/2 cup hot water)
1 stick [4 oz / 113 g] unsalted butter-(Ayu used salted butter)
1 1/2 cup [340 g] granulated sugar-(Ayu used 11/4 cup-[277g] fine sugar)
1 cup [220 g] light brown sugar-(Ayu used 1/4 cup-[57g])
2 3/4 cup [350 g] cake flour
2 tsp baking soda
3/4 tsp baking powder
1 1/4 tsp salt-(Ayu added only 1 tsp)
3 large eggs
3/4 cup [165 g] oil-(Ayu used corn oil)
1 1/2 cup [360 g] sour cream
2 tsp vanilla extract


Instructions -

  1. Preheat oven to 300 F [150 C]. Grease and line two 10 inch, or 3 8 inch cake pans.(Ayu used 3 9"tray, cake slight quite high)
  2. Over low heat, stir together the chopped chocolate, cocoa powder, coffee and butter until everything melts and a nice thick paste is formed. Set aside to cool.
  3. In a medium bowl, sift together the sugars, flour, baking soda, baking powder and salt.
  4. In a large bowl, beat the eggs till slightly thickened and lightened in color. Whisk in the oil, sour cream and vanilla. Stir in the chocolate mixture, mix well. Add in the flour mixture, mixing till just combined.
  5. Bake for 50-60 minutes, or until a wooden skewer inserted comes out clean, and the top feels springy to touch. It's alright if the top feels slightly sticky, it's still baked through, that's just how the cake is. Cool on wire rack. Since this cake is very soft, I recommend freezing the cake layers before using! It always makes for easier cake assembly.
For the salted caramel filling -
1 cup [220 g] sugar
2 tbsp [20 g] light corn syrup
1/2 cup [130 g] heavy cream-(Ayu used whipping cream)
1 tsp fleur de sel-(Ayu just used normal salt)
1/4 cup [60 g] sour cream-


Instructions -
  1. Combine 1/4 cup water, the sugar and the corn syrup in a medium saucepan, stir to combine. Boil on high heat till the mixture reaches 350 degrees on a candy thermometer. If you don't have one, just cook till it's amber colored, about 8-10 minutes.
  2. In the meanwhile, heat together the cream and fleur de sel till it dissolves. Don't let the cream boil. Add it to the caramel once the caramel mixture is ready. Whisk it together. Whisk in the sour cream.Once the caramel has reached to amber colour, Ayu just added the rest of the whipping cream, salt and sour cream quickly till incorporated on low heat till mixture has melted) Allow to cool to room temp.
  3. You can use this immediately, or refrigerate upto 3 days before using.

For the whipped caramel ganache -(Ayu made 1/2 of this amount)
1 pound dark chocolate, chopped-(450g-Ayu used 225g )
1 cup [220 g] sugar-(Ayu used 1/2 cup)
2 tbsp [20 g] light corn syrup-(Ayu used 1 tbsp)
1 1/2 cups [390 g] heavy cream-(Ayu used 195g whipping cream)
4 sticks [1 pound / 452 g] butter, cut into tbsp sized pieces, slightly softened-(Ayu used 1 butter-250g)


Instructions -
  1. This portion is the same as the caramel filling, so you already have a base to judge on.
  2. Combine 1/4 cup water, the sugar and the corn syrup in a medium saucepan, stir to combine. Boil on high heat till the mixture reaches 350 degrees on a candy thermometer. If you don't have one, just cook till it's amber colored, about 8-10 minutes.
  3. In the meanwhile, heat the cream, without letting it boil. Add it to the caramel once the caramel mixture is ready. Whisk it together. Let cool for 5 minutes.
  4. Add the chopped chocolate to the bowl of a stand mixer. Pour the caramel sauce over the chocolate, letting it sit for about a minute before mixing till the chocolate has completely melted.-(Once the caramel has reached to amber colour, Ayu just added the rest of the whipping cream & chocolate into the caramel and quickly stir till incorporated using very low heat till all the mixture has melted)
  5. Now fit the micture with a paddle attachment, and beat the mixture on low till the bowl feels cool to the touch. Add the butter and increase speed to medium high till it's well incorporated, thickened and whipped, about 2-3 minutes. Let cool slightly before using, to make it easier.


Assembling the cake -
  1. Slice the cake layers into 2 using a serrated knife or a cake slicer. I made a 3 layer cake,(Ayu used 3  9" tray) but you could make it a 4 layer cake as well, in fact, the salted caramel filling would be the perfect amount for a 4 layer cake.
  2. Also slice off the tops of the cake. Lay down one sliced layer on a cake board, and add about 1/3rd of the filling. It will seem like it's too little, but it has so much flavor that the amount is perfect. Spread to the edges. You'll notice that some of it gets absorbed into the cake, that's supposed to happen!
  3. Lay on the next layer, add another 1/3rd of the filling, and lay on the last layer. Save the bottom half of a sliced layer for the top, and lay it on inverted so that you have a flat top.
  4. Now put on a light layer of the ganache, just to seal in the crumbs, called a crumb coat. Refrigerate for 5 minutes, then lay on the rest of the ganache and frost as desired [I used a cake comb, it's a lazy decorators best friend!]. Serve immediately. If you must refrigerate, reheat the cake for 10-20 seconds in the microwave, there's nothing worse than cold cake!!(Ayu didnt put in the fridge just leave it outside at room temperature but in a covered cake caddy for 3 days)

Ayam Masak Bawang Putih

Hari ni Hasif, sounded, 'Ma, can you update your blog, very embarassing lah my gambar kat blog mama tak gerak2...hehehe....bukan mama tak nak update, I said..  I was very busy lah..ingatkan nak tunggu I habis typekan recipe for the birthday cake tapi it seems macam panjang pulak sebab kita ingat nak translatekan to Malay as the recipe was in English...tak apalah, kita masukkan recipe ni dulu yang telah kita cuba during the fasting month kemarin, tapi tak sempat nak masukkan blog sebab dah sibuk dengan buat kuih..hehehe....

Recipe yang dah lama masuk list tapi baru hari tu dapat kesempatan untuk mencuba datangnya dari dapur Faradean, yang lama menyepi...sedap ayam masak macam ni..although kalau tengok bawang putih yang digunakan agak banyak, tapi pada kita ok aje bila dah masak tu...sedapppp..Thanks Fara, akak share the recipe here for the rest to try juga ya..

Ayam Masak Bawang Putih

Bahan-bahan
250g daging ayam yang dipotong dadu..sederhana saiznya-(Ayu gunakan 500g dada ayam)
7 ulas bawang putih- kupas kulitnya dan jangan dipotong-(Ayu ketuk aje)
7 ulas bawang putih- dipotong nipis-nipis
5 ulas bawang merah- dimayang
2 biji cili merah-dipotong -(Ayu gunakan dalam 5-8  cili padi diketuk)
2 sudu besar sos cili bawang putih-(Ayu gunakan Thai cili sauce)
2 sudu besar sos cili
2 sudu besar sos tomato
sedikit serbuk kunyit
garam dan gula secukup rasa
minyak untuk menggoreng

Cara-caranya
Lumur ayam dengan sedikit serbuk kunyit dan garam.(+sedikit halia kisar, Ayu tambah)
Panaskan kuali dan 1/2 kuali minyak . Pastikan minyak betul-betul panas.
Gorengkan ayam dengan 7 ulas bawang putih yang belum dipotong (iaitu yang sebiji-sebiji)
Gorengkan hingga ayam agak garing dan aroma bawang putih harum. Hati-hati jangan sampai hangit pulak bawang putih tu. Bila sudah garing..angkat dan toskan.
Kurangkan minyak...tinggalkan dalam 5 sudu besar minyak je.
Panaskan kuali..tumis dulu bawang merah, bawang outih yang dipotong nipis dan cili merah. Tumis hingga terbit aroma. 
Masukkan pula sos cili bawang putih, sos cili dan tomato ke dalam tumisan bawang. Gaul hingga sebati. Kemudian masukkan ayam yang telah digoreng tadi. Perasakan dengan gula dan garam. Hidangkan..
