Mee Rebus Chef Tania

Made this after got a request from somebody who is a die hard fan for Mee Rebus...decided to try out Chef Tania's recipe for a change..Normally I would used my mum's recipe which didnt add in sweet potatoes for the thickening of the gravy..this time, the used of sweet potatoes and prawns stock is used..The verdict memang shiokadooo..hehe..Sedapp..yang pasti next time boleh buat lagi...Thanks Kak Tania, minta izin dipanjang2kan recipenya disini..


MEE REBUS CHEF TANIA

Ingredients:-
1/2 kg tetelan (beef with little fats) boil until soft and reserve the stock aside
for the gravy(Boil with 2000ml of water, reserve about 1000ml stock)
300 g medium prawns deshell, boil and use the stock to grind into paste

Grounded Ingredients to paste:-
8 nos. dried chillies-(Ayu just used 2 tbsp chili paste)
8 nos.shallots
5 nos. garlics
2 inches galangal -(Ayu used just a few slices)
1 cup dried udang geragau (Acetes indicus)

1 cup taucho(rinsed, drained & mashed)*(Ayu blended)
1 cup grounded peanuts*(Ayu blended)
2 nos. bruised lemongrass
5 tablespoon coriander powder
11/2 cup sugar to taste
1/2 cup brown sugar (gula merah) to taste
salt & seasoning to taste(2 chciken cubes)
200 g sweet potatoes(deskined boiled and mashed)
1/2 cup sweet potato flour add water about 200ml for thickening
2000ml water and 1000ml stock so about 3000ml
1.5 kg yellow noodles(mee kuning)
50 cents taugeh

GARNISHING
10 nos. boiled eggs
2 pcs beancurd cut to cubes and fry
10 nos. lime cut into halves
some shredded chinese parsley and spring onions
fried shallots

METHODS
1. Heat oil, saute the grounded ingredients, add bruised lemon grass till fragrant.
2. Add in coriander powder and the 1000ml stock together with the boiled tetelan which has been cut to small pieces.
3. Leave to simmer and add in the 2000ml water, tauchoo, peanuts, salt, seasoning and sugar leave to simmer for a while and add in the prawn paste and the mashed sweet potatoes cook for about 20 minutes over medium heat and lastly add in the thickening until just right. Do not add in all just right not too thick or not too thin. Then cook over low heat to let it set..
4. For the sugar & salt please adjust to taste.
5. Boil water, dip in the noodles needed with taugeh, drain the water . Place into serving bowls. Pour in the gravy and garnish with garneshing ingredients. Can add some dark soya sauce for the garnish too. Mee Rebus garnishing can be bagedil, fried chicken, bones or etc...

Sambal Belacan Daun Kari

Sambal belacan daun kari inilah pertama kali kita dengar...teruja nak mencuba dah lama juga ..sambal belacan ni kita gandingkan dengan Squids in coconut curry..ermm not bad for me...sekali2 ubah selera..

Sambal Belacan Daun Kari

BAHAN-BAHAN:
5 tangkai - cili kering (rebus)+ beberapa biji cili padi-(Ayu tambah)
6 cm belacan bakar
20 helai daun kari
2 sudu kelapa parut-(Ayu gunakan satu sudu besar aje)
4 ulas bawang merah
1 biji limau nipis - ambil jus
Garam dan gula secukup rasa

CARA MENYEDIAKAN:
1. Tumbuk cili kering dengan belacan hingga halus, masukkan daun kari tumbuk hingga hancur dan masukkan kelapa parut, tumbuk lagi dan masukkan bawang tumbuk hingga kesemua bahan lumat.
2. Masukkan garam dan gula secukupnya bersama jus limau gaul hingga sebati.

Info: Sekiranya digiling adalah lebih elok dan sedap, kerana bahan-bahan lebih lumat dan halus. Sambal ini adalah hidangan orang Melaka yang memang suka menggunakan cili kering untuk membuat sambal belacan.

Squids In Coconut Curry

When I saw this recipe last year somewhere in November, I just decided to try out Love's recipe ..simply because I just wanted to try out Indian style coconut curry..Little that I knew that this recipe would be featured in the Jelita Magazine a few months later!!!!..
Yes!!! Upon considering this I am the first one to try out this recipe ya Love..hehehe..Thanks love for sharing, would like to post the recipe here for the rest to try out ya..

At the same time I would like to congratulate  you &  all the food bloggers that was featured too, like Kak Nuridah, Kak Noor Masri and not forgetting Azlita Aziz too..you guys rock... this brings up the standard & image of being a food blogger!!!..


SQUIDS IN COCONUT CURRY by love2cook

Ingredients:~

  • 800gm squids ~ cleaned and cut into rings
  • 5 cloves garlic *
  • 2 inches ginger *
  • 1/4 tsp mixed spices (cumin, mustard seeds, fenugreek)
  • 1 pc onion ~ sliced
  • 2 green chillies ~ sliced
  • 1 large potato ~ cut into big cubes
  • 1 sprig curry leaves
  • 2 tbsp seafood curry powder
  • 1 tbsp chilli powder
  • 1/2 tsp turmeric powder
  • 1 cup coconut milk
  • 1 large tomato ~ sliced
  • water
  • salt to taste

Method :~
  1. Pound together garlic and ginger. 
  2. Mix curry, chilli and turmeric powder with a little water to form a paste.
  3. Heat oil in wok and saute mixed spices, onions, green chillies and curry leaves until fragrant. 
  4. Mix in pounded garlic and ginger paste.
  5. Add squids and potatoes. Mix and cover the wok for 4 minutes.
  6. Add the mixed powder paste. Stir well with the ingredients and cook for 5 minutes. 
  7. Add coconut milk, water and salt. Let the curry boil for few minutes, lastly add tomato. 
  8. Turn off heat after few boils. Curry is ready to be served! :)

Nasi Goreng Hijau Udang Kering

Nasi Goreng Hijau Udang Kering ni dah lamaaaaaaaaaaa..kita masak juga..haish..bila kita click tukan bulan March tahun lepas..hampir setahun tunggu queue untuk masuk blog..hehe. itulah masaalahnya..masak2 ni kita rajin ambil gambar tapi nak masukkan blog tulah yang selalu tak sempat..either kita sibuk,  masa tak mengizinkan or bascially pure lazinesslah..As what I said earlier in my previous post..I think its oklah kan sebab gambar2 ni tak basi..asal ada recipe boleh ajekan bila2 nak masukkan blog..hehe

Nasi Goreng Hijau Udang Kering

Bahan:-
4 mangkuk nasi sejuk
11/2 biji bawang besar dihiris
3 biji bawang putih dihiris
 3 batang kacang botor dihiris ikut suka
*5-10 biji cili padi hijau-(ikut kepedasan masing2)
*10 biji lada hijau
*3 sudu besar udang kering direndam, dan toskan
2-3 biji telur
fishcake dihiris
minyak untuk menumis
garam  & gula secukup rasa

Cara:-
Kisar bahan2 bertanda*. Panaskan minyak dan tumis bawang hiris, then masukkan bahan2 kisar kacau hingga naik bau. Masukkan fishcake & kacang botor yang telah dihiris, kacau rata.Masukkan nasi, garam & gula secukup rasa. Gaul lagi hingga sebati. Nasi ditolak ketepi dan pecahkan telur, biarkan seketika bila dah mengeras, kacau dan gaul rata dengan nasi. Masak hingga nasi kering dan rasa mana yang kurang bolehlah ditambah. Siap untuk dihidang.

Ayam Masak Kicap Lada Hitam

Haish..selalu nak masak buntu kan..tak tahu nak masak apa..Last2.. masak ayam masak kicap..pasti no complain..kali ni kita cuba recipe CMG ni..for a change..di letak sos lada hitam as part of the ingredients..boleh tahan sedap juga..Buat teman2 yang  buntu nak macam kita, tak tahu masak apa for lucnh hari ni bolehlah cuba hehehe.....Terimakasih che mat..akak minta izin dipanjangkan disini pula ya..


Ayam Masak Kicap Lada Hitam

BAHAN-BAHANNYA :-)
1/2 ekor ayam, potong pada saiz yang anda suka, cuci bersih dan toskan -(Ayu gunakan 1kg chicken drumlett)
1sudu besar cili kisar-(Ayu tambah)
2 biji bawang besar, hiris bulat dan leraikan
2 biji cili hijau, belah 2
1 biji cili merah, belah 2
2 biji kentang, hiris sederhan tebal, rendam
3 ulas bawang putih, dititik
1/2 inci halia, hiris
1/3 cawan kicap manis
2 camca besar sos lada hitam
1 batang kayu manis
1 kuntum bunga lawang
1/3 cawan air
Hirisan daun bawang, untuk hiasan

CARA MEMBUATNYA :-)
  1. Ayam digaul dengan sedikit serbuk kunyit dan garam, perap 20 minit dan goreng tapi jangan sampai garing, kasi goreng embal2 saja. Angkat dan toskan. Kentang tadi ditoskan dan goreng hingga kuning keemasan, toskan.
  2. Tinggalkan sedikit minyak dalam kuali, tumis bawang putih, halia, kayu manis dan bunga lawang hingga harum, masukkan sos lada hitam dan ayam. Gaul rata. Tuang air dan masukkan kicap manis, kacau rata dan kecilkan api. Masak hingga pekat.
  3. Tambah bawang besar, cili belah dan kentang, gaul rata. Masak hingga pekat atau berkuah, yang ni terpulang pada masing2. Matikan api dan alih dalam bekas sesuai. Tabur hirisan daun bawang sebelum dihidangkan...
