Mee Hoon Goreng Cili Padi - 20th Day Iftar


Aahh!! its already 20th day iftar,..and I still have not made any cookies yet!!!!!!!...looks like I am going to make 'pointed and pay' cookies (buy ones)....is it weird if I were to say, that I dont like cookies?? or is it weird if I were to say that I dont like pineapple tarts and kuih makmur?...I think very seldom you hear people dont like pineapple tarts right?..well you have found ONE!..

I myself just dont understand why?.. I think by now you all should know that my kids and me only like chocolate, so that goes to cookies after cakes...besides chocolate I dont mind nuts cookies, cornflakes or oats ..so I am still searching for the right cookies(if..... if were to make)..for the next few days..anyway cookies are a must have during hari raya..or else..you dont feel the 'mood' of hari raya right?...hehehe

Ingredients:-
1 packet mee hoon(soaked)
14 medium size prawns
1 big onion*
2 garlics*
a handful bird eyes chilies*(about 30 more or less- depends on preference and of course not 5 lah..if not then its not mee hoon goreng cili padi right?)
3 tbsp dried shrimp* (udang kering)
1 chicken cube
some cabbage sliced
some chye sim sliced
some bean sprout
1 big onion sliced
1/2 cup fried shallots
3 eggs
salt and msg to taste

Method:-
Heat oil and saute sliced onions till soft. Add in blended* ingredients stir and let it till oil goes up the surface. Add in chicken cube,salt and msg to taste and stir in the prawns. Throw in sliced cabbage and chye sim. Add in mee hoon and stir till incorporated. You can add some water if mixture looks a bit dry. Make a well in the middle and add in eggs. Add in bean sprout , fried shallots and stir. Turn off heat and ready.

Shabsuka - 19th Day Iftar


This was my first time making Shabsuka. I have a few recipes on Shabsuka, but was not sure which recipe to follow..looking at the ingredients and method, I have decided to go for this one..cause the other one the method was they fried the eggs first, which I thought it would be the same like eating kacang phool method..I wanted to experience something different(taking the risk since this was my first attempt) making some adjustment for myself...

Still remembered Mr Hubby advised me to do something(menu) which I have been familiarised with... for Ramadan cause fearing if I were to made any 'misadventure'..then people expecting to eat the food for break fast will be dissappointed... As for this, I am proud to say it met our expectations!!!! My mum goes for second servings..! which is quite rare...hehehe so the recipe below, is what I did for my Shabsuka..for original recipe please surf the below address..

Ingredients:-
500g minced beef(or sliced beef)
3 tbsp chili paste
3 tbsp minced garlics
2 tbsp minced ginger
4 tbsp curry powder
1 big onion diced
1 tomato diced
1 cup mix vegetables
1 can medium size tomato puree
4 tbsp tomato sauce
1 tbsp sugar
1-2 cups of water
salt and MSG to taste

Ingredients for toppings:-
2 big onions diced
2 tomatoes diced
some coriander leaves
1-2 red chilies sliced
1-2 green chilies sliced
2 tbsp fried shallots (optional)
6 eggs

Method:-
Mix minced beef with garlics, ginger, and curry powder. Let it rest for at least 20 minutes.
Heat oil in wok and saute onions till soft. Add in chili paste and cook till oil goes up the surface.
Add in marinated beef and stir well. Add in 1-2 cups of water. When beef has reached 3/4 cooked, add in tomato puree, tomato sauce, mixed vegetables and diced tomatoes. Stir well and add in salt, sugar and MSG to taste. Adjust the taste(it should be a bit sour, sweet etc) according to your preferences. Let it simmer for a while and dish out.The mixture shouldn't be too thick or too thin.
Method for preparing Shabsuka:-

Put the beef in a bake able dish and level it.

Sprinkle all the topping ingredients like the tomatoes, onions, chillies, coriander leaves and fried shallots on top of the beef mixture.

Make small holes for eggs and bake at 180C degrees for 15 minutes or at least till the eggs are almost cooked.

Scoop the some mixture and serve hot with white toasted soft bread or toasted french loaves.
Note* Another method of serving shabsuka.
Serve beef mixture on a plate. Sprinkle the toppings. Add fried eggs.(No need to bake)..
and dip in with bread.

Ayam Goreng Madu

The chicken wings are side dish for the kids...this menu, was fast selling among my 2 boys...even the adults also sneaked 1 or 2..hehehe..I made this also because there's a request from my ex colleague, who wanted this recipe...you know who you are, so here it is...

Ingredients:-
12 chicken wings
4 tbsp honey
1 tbsp coriander powder
1 tsp cumin powder
1 tsp fennel powder
2 tbsp minced ginger
5 tbsp minced onion
1 tbsp minced garlics
3 tbsp chili sauce
3 tbsp black soy sauce
1 tbsp oyster sauce
2 tbsp chili paste
1 tsp turmeric powder
salt to taste

Method:-
Cleaned and washed chicken wings with lime juice.Let it for a while. Mix and marinate all the
ingredients with the chicken wings. Leave it for at least 2-3 hours or overnight. Ready to be fried or baked.

Lontong Goreng - 18th Day Iftar

Yesterday didn't get to prepare varieties of food...(as if all this while prepare so much hehe) cause I brought the kids to cut their hair..so by the time, reached home it was around 4 plus..start to prepare the ingredients and 'machine' start to 'on'..hehe..

Fuh!..during fasting month if were to go out, it really tested your 'patience' and 'strenght'...it was so hot outside..adding to carrying some groceries back...alamak..thats why I hate to go out in the day during fasting and that is why our iftar menu, I seldom buy cause to get out of the house really made me think twice...that if you are lucky to get food that is nice oklah jugak, if the food is not to your expectations, then you wasted your money and effort of walking to the bazaar Ramadan...this is just my opinion, but sometimes if really emergency then no choice lah kan?

Anyway, I bought the ready made 'lontong' wrapped in banana leaves(compressed rice)...that's why heavy lah...decided to make lontong goreng...quite sometime didn't made this..

Ingredients:-
1.5kg lontong (11/2 tube) diced
250g boiled sliced beef
10 medium size prawns
3 eggs
1 cup mix vegetables
4 tbsp tamarind juice
10 tbsp chili paste
2 garlics minced
2 big onions minced
1 tbsp sugar
a handful Chinese celery and spring onions sliced thinly
a handful of fried shallots
salt and MSG to taste

Method:-
Saute garlics, onions and quickly add chili paste in. Let it cook for a while and add in beef. Stir well. Let it cook till oil goes up the surface. Add in sugar, tarmarind juice, salt and MSG to taste. Add in prawns and stir again. Throw in mix vegetables and diced lontong in. Make a well in the middle and add in eggs. Stir well. Lastly add in fried shallots, chinese celery and spring onions and stir well before turn off heat.
* I prefered my lontong goreng to be a bit moist.
