.I like to cook and eat this vegetable dish, in fact this was one of my favourites.. during my late mother in law 100 days prayers last year.... we had this for the guest..and this 'sold out ' first compared to other dishes...I can eat it on its own without rice..
Ingredients:-
1 cup boiled mussels
1 big onions sliced thinly
4 garlics crushed
2 red chillies sliced (I put red cili padi)
2 green chillies sliced I put green cili padi)
1/2 inch belacan + 2tbsp water
1 tbsp tamarind juice
2 tbsp oyster sauce
1 hard bean curd diced and fried
2 tempe, diced and fried
2 potatoes diced and fried
7-8 long beans sliced slant
1 bean thread vermicelli (soo hoon) soaked
dried bean curd sheets (tahu kering) soaked (optional)
salt and some sugar or MSG to taste
1/2 cup water
Method:-
1. Heat oil in wok.Add in boiled mussels and fry for a while.Push aside of wok and add in sliced onions, garlics and chillies and stir fry till soft and mix well with the mussels.
2. Add in oyster sauce, belacan and tamarind juice. Stir well, add in tempe, hard bean curd, potatoes and long beans. Add in water and stir well again.
3.Add in salt and some sugar, add in thread vermicelli and stir till soft. Off heat and serve with hot rice.
