Lemak Pucuk Ubi Berkupang
I like this dish very much....cause the smell reminds me of kampung!...reminds me when my late grandmother cooked 'kampung vegetables' during those years when she was still around... really nostalgic...added with the fresh mussels..fulamak..sedap!!!
Ingredients:-
1 bunch cassava leaves sprigs (pucuk ubi)
1 cup boiled mussels
2 lemon grass bruised
1/2 inches galangal bruised
1 cup coconut milk
3 cups diluted coconut milk
1 dried tamarind slice (I added 2 more)
salt and sugar to taste
1 big onion*
3 garlics*
4 red chillies*
1/2 inches fresh turmeric root*
1/2 tbsp dried shrimp*
Method:-
Cassava leaves pulled out from sprig and boiled till soft. Drained, squeeze and slice coarsely. Add in pot together with lemon grass, galangal, mussels and blended ingredients*. Stir well.
Add in coconut milk and cook on medium heat till bubbling boil. Add salt and sugar to taste and let it simmer and stir occasionally. Turn off heat and ready.
