Talam Beras

This is my mum's recipe, her trademark kuih among my cousins, either this or the pau cause, they will ask her to make either this 2 if there are majlis kenduri kendara ....anyway, below there are Malay & English version the English version already converted by S Shamen into metrics measurements... I like this kuih cause its lemak2 manis gitu..

Ingredients:-
Lapisan bawah
150g tepung beras
21/2 cawan santan(625ml)
1 tsp garam
Lapisan atas
2 tbsp tepung beras
2 tbsp tepung gandum
1 cawan santan
1 cawan air gula melaka+ 1 tbsp gula pasir(larutkan dulu)
3 biji telur
1/2garam


Method:-
Lapisan bawah
Sediakan kukusan.Kacau tepung dengan santan dalam mangkuk hingga sebati bersama garam. Bila dah sebati, tapis dan tuang dalam loyang. Put 9' loyang dalam kukusan dan kacau lagi supaya jangan mendak diatas kukusan yang tengah mendidih airnya. Kacau sampai agak2 bergentel baru tutup kukusan.Kukus dalam 20 min atau hingga masak.Sementara tu buat lapisan atas.

Method:-

Lapisan atas
Pukul telur dan masukkan bahan2 yang lain dan kacau hingga sebati. Bila dah sebati, tapis. Tuangkan adunan keatas lapisan bawah yang dah masak tadi dan kukus lagi selama 15-20 min atau hingga masak.
Tunggu sejuk baru potong.Kukusan hendaklah, di bungkus dengan kain supaya air kukusan tidak masuk dalam kuih.

Here is the English version and in metrics measurements, kindly translated by S_Shamen.
Ingredients:-
Bottom (prepare this first)
150 gm rice flour
625 ml coconut milk
Salt to taste
Mix all ingredients, stir well and filter.
Simmer for a while on the stove to get thick batter (not to thick, just enough with little bit lumpy batter).
Transfer to the 9'' round pan, and cook in heated steamer for approximeately 20 minutes.
Prepare top part.

Topping
30 gm rice flour
30 gm plain flour
250 ml santan
250 ml warm water **
65 gm palm sugar **
10 gm white sugar **
3 nos egg
salt to taste
Boil ingredients with ** (water, palm sugar & white sugar). Set aside.
Lightly beaten the eggs. (if dont beat also can).
Mix 1 & 2 with other ingredients, stir well and filter.
Pour on the bottom part when it ready. Steam till it set. I steam it for nearly 1 hour.
Let it cool before serve/cut.

hik hik..ayu, tq sbb letak gambo senduk tu...dah tau yg mcm mana. dulu ade lebih kurang gitu, tq sbb diorg ckp x leh guna melamine tu, dah buang la plak..nnti kna cr senduk dulu..hehhe

Hi,

I just did it. It came out just like in the picture. I added a little more gula malika for sweetness. I had to steam for more than an hour as my container is only 7 inches round.

It was sooooo good. Many thanks for the recipe and to the friend blogger who translated it.
